I’m so ready for this winter to be over. As I sit here writing this post, we have another, yet again, snow day. This time it’s for freezing rain on the forecast. All I can keep thinking is, “C’mon Spring”. I’m ready for a fresh start.
To get into Spring mode, I wanted to share a new recipe I’m excited about. Not only is this One-Pot Chicken Burrito Bowl tasty, but it’s also made with one of my favourite ingredients, Canadian chicken. We eat a lot of chicken in our home because it’s a healthy protein and more budget-friendly than other types of meat.
Maybe you’re wondering about what’s so special about Canadian chicken and why you should look for their Raised By a Canadian Farmer logo when you are shopping for chicken. I always look for the logo when I’m out shopping. It’s not at all stores yet, but hopefully more places get on board and add the labels. I think it’s important to know where your chicken is coming from.
To me, this logo represents quality and consistency. I know that Canadian Chicken Farmers raise their chickens to a nationally-set, mandatory food safety and animal care standards. ALL Canadian chicken is free of hormones and steroids. It’s nice to know that the industry has these programs to ensure us, the consumers, are getting a top notch quality product.
If you can’t find it at your store, you can ask them to start using it. The more people who indicate that the logo is important to them, the more likely stores are to start offering it.
One-Pot Chicken Burrito Bowl
Now that you know why it’s important to me to use Canadian chicken, let’s chat about my March recipe – One-Pot Chicken Burrito Bowl. I love recipes that use less dishes because that means less mess for me to clean up afterwards. Regular chicken burritos can be messy to eat. I need a bib when I eat them. Putting them into a bowl makes it super easy (and much more neat) to eat. No bib required!
The chicken and rice cook together at the same time so there’s no need to prepare them separately. It’s a throw your ingredients into a pot kind of recipe. After 20 minutes of simmering, everything is cooked to perfection and ready to eat. Plus, the Mexican flavours have a chance to come together to create a mouthwatering meal.
The chicken was so tender and flavourful. You don’t even miss the tortilla!

One-Pot Chicken Burrito Bowl
Make your own Chipotle burrito bowl at home without all the dishes! It's the perfect easy main dish for Mexican-inspired nights.
Ingredients
- 1 tbsp vegetable oil
- 1 onion, chopped
- 1 red pepper, chopped
- 1 yellow pepper, chopped
- 3 tomatoes, chopped
- salt and pepper, to taste
- 3 tbsp tomato paste
- 1 package taco seasoning
- 1 can (540ml) pinto beans, drained and rinsed
- 2 uncooked chicken breasts, chopped into one-inch pieces
- 1 cup uncooked rice
- 2 1/3 cup water
- 1/2 cup cheddar cheese, shredded
- 2 sprigs cilantro, chopped
Instructions
- Add vegetable oil to a large pot over medium-high heat. Add onions, tomatoes, red pepper, yellow pepper, salt and pepper. Cook for 6 minutes, stirring often.
- Add tomato paste and taco seasoning. Cook an additional minute, stirring often.
- Add chicken, pinto beans, rice and water. Season with salt and pepper. Bring to a boil over high heat.
- Once boiling, cover and reduce heat to medium low. Simmer for 20 minutes. Remove from heat.
- Stir in cheddar cheese and cilantro and serve hot.
