Marshmallow Bars
Marshmallow Bars are a delicious no-bake dessert! Peanut butter, marshmallows, and butterscotch are combined in these bars.

There are lots of names for this old-fashioned dessert bar recipe. I call them Marshmallow Bars. You may call them Peanut Butter Marshmallow Bars, Marshmallow Squares, or Butterscotch Bars. What you call them doesn’t matter, as they still have the same great taste!
This no-bake dessert is perfect when you need to whip up something quickly for a bake sale or unexpected company. It hardens up in no time in the fridge and is ready to enjoy.
I taste the peanut butter more than the butterscotch in this recipe. I love the smooth, creamy consistency. So yummy!

- Unsalted Butter: Adds a rich, buttery flavor.
- Peanut Butter: Gives a nutty taste that pairs perfectly with the marshmallows.
- Vanilla Extract: A touch of vanilla enhances the sweetness.
- Butterscotch Chips: These melt into a creamy, delicious mix.
- Mini Marshmallows: The star of the show, giving the squares their chewy texture.
- Salt: Balances the sweetness and enhances the other flavors.

How to Make Marshmallow Bars
- Step One: Melt butter, butterscotch chips, and peanut butter in a medium saucepan over low heat.

- Step Two: Remove from heat and let sit for 10 minutes to cool so the marshmallows don’t melt. Stir in the marshmallows, vanilla extract, and salt.
- Step Three: Pour into a 9-inch pan. Refrigerate until solidified. Cut into squares.

What to Serve with Them
- Fruit Platters: Fresh fruits like strawberries, grapes, or pineapple offer a refreshing balance to the sweetness.
- Savory Snacks: Nuts, cheese, or veggie sticks with dip can help balance the sugar.
- Beverages: Pair with ice-cold milk for kids or coffee for adults.
- Ice Cream: A scoop of vanilla or chocolate ice cream takes these squares to the next level.
- Other Treats: Add cookies or brownies to your dessert spread for variety.

Variations and Substitutions
- Chocolate-Dipped Marshmallow Squares: Dip half of each square in melted chocolate for an extra layer of flavor.
- Fruity Marshmallow Squares: Mix dried fruits or fruity cereals like Froot Loops for a fun twist.
- Marshmallow Substitutes: Swap marshmallows with marshmallow fluff or homemade marshmallows for a different texture.
Storage Instructions
- Room Temperature: Wrap cooled squares in plastic wrap or foil to keep them fresh.
- Refrigeration: Store in the fridge for a firmer texture and longer freshness.
- Freezing: Freeze squares in airtight containers for up to 3 months. Just thaw before serving.

Recipe Tips and Tricks
- Prepare the Pan: Line with parchment paper or foil for easy removal.
- Clean Cuts: Use a sharp knife and clean it between cuts for neat squares.
- Use Parchment Paper: Prevent sticking by lining your baking tray.
- Low Heat: Melt marshmallows and chocolate on low heat to avoid burning.
- Perfect Square Cuts: Chill squares before cutting, and use a sharp, clean knife.
- Hardening Issues: Add more marshmallows or chill squares longer if they’re not firming up.

Caramel, Toffee, and Butterscotch: What’s the Difference?
- Caramel: Made from white sugar, cream, and butter with a smooth, creamy texture.
- Butterscotch: Made with brown sugar and butter, offering a deeper, richer flavor.
- Toffee: Similar to butterscotch but cooked longer for a brittle, crunchy texture.

I want to add peanuts also. How much would I add to this recipe?
I would do 1/2 cup of peanuts.
I make these often only I use colored marshmallows.
Can you make these without the peanut butter?
You could use another nut butter, but I wouldn’t leave it out.
I never thought to combine peanut butter, butterscotch, and marshmallows. It sounds like a great, sticky treat!
I have never even thought of doing this before, never seen them before, but definitely looks good.

Hi, It looks divine. I just printed the recipe and I was wondering what is the storage life? Can I make on Monday for Saturday party?
We’ve always eaten them within three days. I think if you kept them in the fridge you should be ok.
These look absolutely delicious but I’m afraid that I don’t like peanut butter, I know I’m in the minority. Now caramel and we’re talking 🙂
