    • 4 cube steaks
    • 2 sleeves saltine crackers crushed
    • 1 tsp kosher salt
    • 1 tsp black pepper
    • ¼ tsp cayenne pepper
    • 1 cup plus 2 tbsp all-purpose flour
    • 1 ½ cups buttermilk
    • oil for frying
    • 2 cups milk
    • salt and pepper to taste for seasoning gravy
