Ingredients
- 4 cube steaks
- 2 sleeves saltine crackers crushed
- 1 tsp kosher salt
- 1 tsp black pepper
- ¼ tsp cayenne pepper
- 1 cup plus 2 tbsp all-purpose flour
- 1 ½ cups buttermilk
- oil for frying
- 2 cups milk
- salt and pepper to taste for seasoning gravy
Instructions
- In a bowl, stir together the crushed crackers, salt, pepper, cayenne pepper and 1 cup of flour.
- In another dish, place the buttermilk and cube steaks.
- Coat the cube steaks in the cracker flour mixture and then place back into the buttermilk.
- Place the steaks in the cracker mixture once more and set aside.
- In a large deep skillet, heat about an inch of oil over medium-high heat.
- Once the oil is hot, add the steaks. Be careful to not overcrowd the pan.
- Fry the steaks for about 3 to 5 minutes per side until each side is golden brown and crispy.
- Place on paper towels to drain off any extra oil.
- In the same skillet, discard all but 2 tablespoons of the oil.
- Whisk 2 tablespoons of the flour into the oil.
- Slowly whisk in the milk and bring the mixture to a simmer while whisking. Let it simmer for about 2 minutes or until thickened.
- Add the salt and pepper, to taste. Serve over the chicken fried steak.
