Apple Butterscotch Buns

These Apple Butterscotch Buns are made with flaky Pillsbury rolls layered with sweet apple pie filling, a rich homemade butterscotch topping, and crushed walnuts.

One of my favorite pastimes is coming up with new mouthwatering recipes to share with my family, friends, and, of course, all of you!

And I am so excited to share these Apple Butterscotch Buns. They’re a sweet, decadent cross between breakfast casserole and chelsea buns and can be served as a sweet breakfast or dessert!

  • Pillsbury Rolls – You’ll need one package of refrigerated Pillsbury flaky rolls for this recipe.
  • Eggs – The eggs bind the rolls together to give the dish more of a “casserole” feel.
  • Apple Pie Filling – I use store-bought apple pie filling to keep the prep extra quick and simple, but feel free to make homemade pie filling if you’re feeling extra ambitious.
  • Butterscotch – We’re making homemade butterscotch with butter, brown sugar, salt, heavy cream, and vanilla extract.
  • Walnuts – I like to give the buns a little extra texture with a handful of chopped walnuts.

    All this yummy goodness is ready to go with just 15 minutes of prep! Follow along to see how to make apple butterscotch buns. 

    • Step One: Cut the flaky rolls into quarters and layer into the bottom of a greased baking pan.
    • Step Two: Whisk the eggs, then pour over the flaky rolls. Spread on the apple pie filling.

    • Step Three: In a pan over medium heat, combine butter, brown sugar, salt, and creamy. Once the butter is melted, turn the heat up to high and bring to a boil. Boil, stirring often, for 4 minutes, then remove from the heat and stir in the vanilla.

    • Step Four: Pour the butterscotch over the rolls, top with walnuts, then bake at 375ªF for 30 minutes. Cool for 15 minutes, then serve.

    Recipe Tips and Variations

    • Grease the pan. This prevents the buns from sticking or burning on the bottom of the pan.
    • Watch the butterscotch carefully. It needs just a few minutes to cook to achieve the perfect texture. Keep a close eye on it and stir often so it doesn’t burn.
    • Cool before serving. I recommend letting the rolls sit in the pan for 15 minutes before digging into them. They will be super hot!
    • Try another nut. The walnuts are delicious, but you could swap them out for chopped pecans, almonds, or just leave them out altogether. 
    • Not a fan of butterscotch? Swap it out for plain caramel or rum butter sauce instead!

    Storage Instructions

    Once these rolls are baked and cooled, they can be covered and stored in the refrigerator for up to 4 days. 

    To enjoy again, bring to room temperature or warm in the microwave or oven.

    Can I Freeze?

    Yes! To freeze these buns, let them cool completely, then wrap the baking dish tightly in plastic wrap and foil. Store in the freezer for up to 1 month. When you’re ready to serve, thaw in the fridge, then warm as desired.

    Ingredients
     
     

    • 1 package Pillsbury Refrigerated Flaky Rolls or Biscuits
    • 2 large eggs
    • 2 ¼ cup apple pie filling
    • ¼ cup unsalted butter
    • ½ cup brown sugar
    • 1 tsp salt
    • ½ cup heavy cream
    • 1 tsp vanilla extract
    • ¼ cup walnuts chopped

    Instructions

    • Preheat oven to 375°F. Grease a 9-inch square baking pan with cooking spray.
    • Cut flaky rolls into quarters. Place evenly on the bottom of the baking pan.
    • Whisk eggs and pour over flaky rolls.
    • Spread apple pie filling on top.
    • Add butter, brown sugar, salt and table cream to a pan over medium heat. Once butter melts, turn up to high and bring to a boil. Boil for 4 minutes, stirring frequently. Remove from heat and stir in vanilla extract.
    • Pour butterscotch sauce over flaky rolls. Top with walnuts.
    • Bake for 30 minutes. Remove from heat and let cool 15 minutes before serving.
