Macaroni Dill Salad

Macaroni Salad is a classic recipe. Add a little dill and radish to it and you have brought it to a whole other dimension. It’s seriously yummy.

I love the creamy dressing and how it envelopes the tender macaroni noodles. Radishes are one of my favourite veggies. I eat them raw sliced like chips. So so good. I added a bunch chopped along with some fresh dill to create a mean summer salad.

It’s peppery and fresh tasting. You could eat a bowl for lunch or serve it on the side of a burger or steak. 

I find the longer it sits in the fridge to chill, the better the flavor becomes. It’s best served cold.

  • Mayonnaise
  • Sour Cream
  • Fresh dill
  • Dijon mustard
  • Garlic
  • Radishes
  • Green pepper
  • Cayenne pepper

How to Make

Cook the macaroni noodles according to the package directions. Drain in a colander and rinse the noodles in cold water. Set aside.

In a large bowl, stir together mayonnaise, sour cream, dill, Dijon mustard and garlic. Add the macaroni, radishes and green pepper. Stir to combine.

Add cayenne, salt and pepper and stir to combine.

Cover salad and chill in the fridge for at least two hours before serving.

How to Store

Store in the fridge, covered, until ready to eat. Cover and refrigerate any leftovers for up to three days. This salad does not freeze well because of the creamy dressing.

Ingredients

  • 2 cups macaroni noodles, uncooked
  • 1 cup mayonnaise
  • 1/3 cup sour cream
  • 1/4 cup fresh dill, chopped
  • 1 tbsp Dijon mustard
  • 1 clove garlic, minced
  • 1 cup radish, chopped
  • 1 green pepper, chopped
  • 1/4 tsp cayenne
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions
