This simple Carrot Loaf recipe is full of fall spiciness! It’s flavourful and delicious. Plus, it’s easy to make. It reminds me of a spice cake, but in a bread format.
It’s loaded with carrots, raisins and spice and is yummy served hot and fresh from the oven with some butter.
To save time, I used matchstick carrots instead of grating my own. Either one will work.
This recipe will make one big loaf or two smaller loaves. If you are making only one, make sure you adjust the baking time accordingly. You’ll need to bake it longer by at least 30 minutes. Always test with a fork or toothpick to make sure it’s done.

- 2 cups sugar
- 1 cup vegetable oil
- 4 eggs
- 2 cups grated carrots
- 3 cups flour
- 3 tsp baking powder
- 1/4 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp allspice
- 1 tsp vanilla extract
- 1 cup raisins
- Preheat oven to 350F.
- Stir together sugar, eggs and oil. Add in grated carrots and stir to combine.
- Sift dry ingredients. Add to wet mixture and stir. Add raisins and vanilla and stir.
- Pour into two greased loaf pans. Bake for 1 hour or until a toothpick inserted in the middle comes out clean.
