If you love the Chipotle burrito bowls filled with rice and tender chicken, this is the perfect copycat recipe. Peppers, onions, beans, chicken, cheese, and rice combine to make the most delicious homemade version you’ll ever eat. The deconstructed burrito can be changed to match your cravings. 

This delicious recipe uses the best part of a burrito. You can fill it up with a ton of toppings or make it simple. You have full control of every step of the process. It’s a perfect replacement for tacos on Taco Tuesday and the best way to meal prep for the rest of the week.

The fresh ingredients in this burrito bowl can’t be beat. Here’s what I used to make my chicken burrito bowl. The ingredients are in the recipe card at the bottom of this post. 

  • Vegetable oil – Use this or olive oil to saute the onions, peppers, and tomatoes. 
  • Yellow onion – Any onion color will elevate the flavors of the peppers. 
  • Red and yellow peppers – Any color of bell peppers adds an earthy crunch to the tasty bowls.
  • Tomatoes – Use your favorite kind of larger tomatoes. If you use smaller tomatoes, you must use twice as many. 
  • Salt and pepper – This adds flavor to the rest of the ingredients. 
  • Tomato paste – The tomato paste sweetens and rounds out the flavors of the taco seasoning. 
  • Taco seasoning – Buy a packet or make your seasoning blend. 
  • Pinto beans – Drain and rinse the can of pinto beans. You can also use fresh beans that you cooked.
  • Chicken breasts – Shredded chicken breast is the main source of protein in the bowls. 
  • Rice – You’ll use uncooked rice in the bowls. 
  • Water – This will cook the chicken and the rice in the casserole. 
  • Cheddar cheese – This is added right before you serve it, and it melts beautifully. 
  • Cilantro – This is an optional herb to add as a garnish.

How to Make One-Pot Chicken Burrito Bowl

  • Step One: Add vegetable oil to a large pot over medium-high heat. Add onions, tomatoes, red pepper, yellow pepper, salt and pepper. Cook for 6 minutes, stirring often.

  • Step Two: Add tomato paste and taco seasoning. Cook an additional minute, stirring often.
  • Step Three: Add chicken, pinto beans, rice and water. Season with salt and pepper. Bring to a boil over high heat.

  • Step Four: Once boiling, cover and reduce heat to medium low. Simmer for 20 minutes. Remove from heat.
  • Step Five: Stir in cheddar cheese and cilantro and serve hot.

    Can I Make Ahead?

    Yes, you can make this recipe ahead of time. But, for the best results, I recommend storing each ingredient in separate containers. Then, combine them in a bowl right before you serve it.  

    What Kind of Rice To Use?

    I kept my recipe simple by cooking white rice with the rest of the ingredients. If you want to change it, leave the rice and water out of the recipe and make cilantro-lime rice on the side. 

    Can I Use Brown Rice? 

    Yes, you can use brown rice instead of white rice. This won’t change the cooking time. Just check the rice after about 20 minutes. If it’s not quite finished cooking, cook the easy chicken recipes for a bit longer.

    To make it low-carb, leave the water and rice out of the recipe. Serve some cilantro lime cauliflower rice on the side. It would be best if you also made it without beans. Add avocado to boost the healthy fats in the bowl. 

    What other types of chicken can you use? 

    Cut some chicken thighs into bite-sized pieces, or make crockpot chicken. You could also use rotisserie chicken.

    Ingredients
     
     

    • 1 tbsp vegetable oil
    • 1 yellow onion chopped
    • 1 red pepper chopped
    • 1 yellow pepper chopped
    • 3 tomatoes chopped
    • salt and pepper to taste
    • 3 tbsp tomato paste
    • 1 package taco seasoning
    • 1 can pinto beans 540ml cans, drained and rinsed
    • 2 chicken breasts uncooked, chopped into one-inch pieces
    • 1 cup rice uncooked
    • 2 ⅓ cup water
    • ½ cup cheddar cheese shredded
    • 2 sprigs cilantro chopped

    Instructions
