Pancetta & Onion Frittata Recipe
I discovered a new dish that I can’t get enough of: Pancetta & Onion Frittata! It is soooo good! It’s hard to stop at just one piece. The great thing is that its perfect for my low carb diet I’m on right now.
It’s very simple and quick to make. You will need 8 eggs, 1 cup shredded parmesan cheese, 1 package of pancetta (Italian bacon), 1 onion (I use sweet onion), 2 tbsp. butter and salt and pepper. If you can’t find pancetta, just use regular bacon.
First step is to cook your chopped onions in about 1 tbsp of butter. Cook them for about 7 to 10 minutes, or until they are caramelized. Add in the pancetta around the 7 minute mark and continue to cook for a few more minutes.
In the meantime, mix 8 eggs with parmesan cheese in a bowl and season with salt and pepper. Pour the egg mixture on top of the onion and pancetta and do not mix. Let it cook on the stovetop for about 3 minutes.
Place the whole skillet right in a 350 F oven and bake for 15 minutes. Leave it cool for a few minutes so you don’t burn yourself. Enjoy!
