    Ingredients
     
     

    • 1 large sweet onion chopped
    • 1 cup water
    • ½ tsp Cajun Seasoning
    • 2 chicken breasts cut into 1-inch cubes
    • 4 hot Italian sausages sliced
    • 1 can diced tomatoes and green chiles 14.5oz/540ml can, undrained
    • 1 lb medium raw shrimp peeled & deveined
    • 4 cups hot cooked rice

    Instructions

    • Combine first six ingredients in a slow cooker. Cover and cook on low for 8 hours or high for 4 hours.
    • Stir in shrimp. Cover and cook for 10 minutes or until shrimp are done.
    • Serve over rice.

      We just made this this past weekend. While not southern and never having Jambalaya, I must say this is incredible! It’s so good, no changes need to be made. Only difference is we used 2 boxes of Jambalaya rice. But, it was so good, people wanted more and we had to use white rice afterwards!

      Looking forward to having this be a staple in our winter diet and maybe trying Andouille.

      Thanks so much! This was a big hit for everyone involved, both the cooking AND eating parts.

      The photo od this recipe is making me hungry. I wuld have to use less seasoning so thgat I can tolerate it, so maybe not a jambalya but still delicious.

    15. Sounds like a good recipe one that we would like. I never knew that you put shrimp in jambalaya. I would have to adjust the spicy ingredients in it. To much heartburn. This would be good to make in the crock pot, thanks for the recipe.

    16. Thanks for this recipe. We have jambalaya mix which include the spice and rice then add just hamburger to it. Your recipe sounds much better with 3 kinds of meat and we could make it in our slow cooker.
