Sunday Meatloaf

If you’re on the hunt for a delicious family recipe, then you can’t beat this Sunday Meatloaf. Although I adore the moist, rich, and meaty filling, it’s the mouth-watering tomato sauce and bacon that take things to the next level!

Now, I get that this is called Sunday Meatloaf – but it’s perfect for whipping up on any day of the week. Not only is it incredibly easy to make, but the crumbly stuffing and slightly sweet flavors make it a veritable midweek treat! And hey, doesn’t everything taste better with bacon?

The beef in this recipe keeps things super tasty, and I love using Stovetop Stuffing because it’s ready in a flash. But if you’re feeling bougie, you can whip up your own to use!

Once you’ve mixed your meatloaf ingredients, all you need to do is grease a pan and pop your meat in the oven.

    • Ground beef. Try not to use ground beef that’s too lean as it’ll cause your meatloaf to dry out. 15% is usually the sweet spot, but you can probably get away with anything that’s not 5%!
    • Salt.
    • Pepper.
    • Evaporated milk. The evaporated milk is crucial for giving your meatloaf plenty of moisture and preventing it from drying out while cooking.
    • Worcestershire sauce. For an extra hit of savory goodness.
    • Stovetop stuffing mix. The stuffing mix is key for giving this meatloaf extra savory oomph. It’s loaded with herbs and spices that’ll naturally dial up the taste in every mouthful.
    • Tomato soup. Any brand is fine, but making your own will give this meatloaf even greater depth of flavor.
    • Bacon strips. Make sure these are uncooked so that they crisp up perfectly in the oven.

    How to Make Sunday Meatloaf

    • Step One: Preheat the oven to 350°F.
    • Step Two: Grease a loaf pan.
    • Step Three: In a large mixing bowl, mix ground beef, salt, eggs, pepper, evaporated milk, and Worcestershire sauce.
    • Step Four: Spread half of the mixture into the loaf pan.
    • Step Five: Spread the stuffing mix on top of the meat mixture in the loaf pan. You can then top this with the remaining meat mixture.

    • Step Six: Spread tomato soup on top.
    • Step Seven: Place strips of bacon on top of the tomato soup and then bake in the oven for 1 hour.

    What to Serve with Sunday Meatloaf

    Although this Sunday meatloaf tastes delightful on its own, you can serve it with a few sides (or appetizers!) to spice things up.

    Recipe Tips and Tricks

    • Don’t skip the stuffing mix with this. The seasoned crumby layer will absorb some of the evaporated milk as your meatloaf cooks. This should keep the moisture safely inside your meatloaf and stop it from drying out!
    • Don’t overmix your meatloaf. If you want to avoid a dense meatloaf, gently incorporating the ingredients is key. Skip the food processor and use a wooden spoon to mix everything until it’s JUST incorporated.
    • Season everything well. This might sound obvious, but salt and pepper are key if you don’t want to have a bland meatloaf on your hands. The Worcestershire sauce is also crucial for dialing up the meatiness and adding greater depth of flavor.
    • You don’t have to do this, but covering the meatloaf with foil for the first 45 minutes of cooking time can help to retain extra moisture. Just remove it in the last 15 minutes to get a beautiful glaze.

    Variations and Substitutions

    • Although the tomato soup adds a bunch of sweetness, you can also grab a BBQ glaze to add more of a Southern feel to your meatloaf.
    • You can replace the ground beef in this recipe with chicken, turkey, or pork. But you need to make sure you’re using meat with a relatively high-fat content to avoid a dry result.

    This delicious Sunday meatloaf will stay tasty for around 3 days in the fridge if stored in an airtight container.

    Can I Freeze?

    You can totally freeze meatloaf if you want to make it ahead of time!

    I suggest baking the meatloaf first, letting it cool, and then wrapping it in individual portions in the freezer.

    You can then defrost portions when you need dinner during those crazy-busy weeks!

    A delicious family recipe! This easy meatloaf has a flavorful stuffing filling and is topped with a mouthwatering tomato sauce and bacon.

    Ingredients
     
     

    • 2 large eggs
    • 2 lb ground beef
    • 1 tsp salt
    • ¼ tsp pepper
    • 1 cup evaporated milk
    • 1 tsp Worchestershire sauce
    • 2 cups Stovetop stuffing mix uncooked
    • ½ cup tomato soup
    • 3 strips bacon uncooked

    Instructions

    • Preheat oven to 350°F. Grease a loaf pan.
