One Pan Lemon Thyme Chicken is the ultimate weeknight dinner recipe. A one-pan chicken that is loaded with savory and citrus flavor in every divine bite. 

I used drumsticks for my choice for this dish. They bake up quickly and the meat falls off the bone as you bite into it! This is such an easy recipe that is a go-to when I want something easy but yet satisfying.

    Types of Chicken Farmers

    • Free Range: Chickens must have access to the outdoors.
    • Free Run: Chickens must be able to move freely in the barn. All Canadian chicken is considered free run.
    • Grain Fed: All Canadian chicken is given a feed that consists of over 88% grain. This is a term mostly used for marketing.
    • Halal: A term used in Islamic law. Chickens must be well-rested and handled in a way that minimizes suffering.
    • Hormone Free and/or Steroid Free: Mostly used as a marketing term since using hormones in raising chickens has been banned in Canada since the 1960s.
    • Kosher: The chicken is processed according to kosher dietary requirements for Jewish law.
    • Organic: The chicken is raised to meet a specific standard to meet the requirements set by the Canadian General Standard Boards and provincial organic certification boards.
    • Raised without Antibiotics: Chickens were not treated in any way with antibiotics.
    • Vegetarian Grain Fed: Chickens are fed with a feed that contains no animal by-products and only vegetable sources of protein (like soy) are used.

    How to Know If Raised By Canadian Farmer

    When you are out doing your grocery shopping, look for the Raised by a Canadian Farmer logo on the chicken you buy. It lets you know that the chicken you’re buying for your family is Canadian.

    In addition, you’ll know that it raised according to the highest possible quality standards of food safety and animal care. If you don’t see the logo on the chicken at your store, you can voice your opinion to the store and let them know you want it.

    Over 80% of Canadians want this mark on their chicken so let’s make our voices heard!

    Healthy Chicken Recipe

    Now that I’ve given you a little background about the Chicken Farmers of Canada, let’s get on to this month’s recipe! I was tasked with creating a healthy chicken recipe. I know many of us have made New Year’s resolutions to eat better – me included. I made an easy sheet pan recipe: One-Pan Lemon Thyme Chicken. It’s SO GOOD!

    What Vegetables to Use

    I love that everything cooks together on one baking sheet. There’s less mess to deal with after dinner. I roasted green beans, carrots and potatoes with chicken drumsticks rubbed with a flavourful buttery herb coating. It’s a perfect meal for those following a low carb diet.

    I love that the lemon butter herb spread also makes it way on to the veggies and adds even more flavour. Even the veggie haters in my house liked the tender roasted veggies.

    The best part is the chicken drumsticks, in my opinion. They were perfectly cooked and had just the right hint of lemon/herbs. I cooked ours with the skin on, but you can always remove it after baking it.

    Could I Use a Different Cut of Chicken

    Absolutely! If you have chicken thighs, breast or any other cut of chicken reach for it. Even boneless will work. The biggest thing to remember is each cut of chicken is going to need adjusted for cook time. 

    The biggest thing you will need to know is making sure your chicken is fully cooked. You can use a thermometer to check the internal temperature.

    You want to ensure it reads 165 degrees or higher. If you are using chicken with a bone make sure not to touch the thermometer to the bone as this can give you an inadequate reading. The bone will make it hotter than what it actually is.

    Could I Swap Vegetables Out in this Chicken Sheet Pan Recipe 

    Absolutely! Feel free to clean out your produce and use what you have on hand. I love my veggies I used but there are times I use the produce that is close to expiring. 

    It is a great way to reduce your waste on food you toss out. I truly didn’t find one vegetable yet I haven’t loved paired next to this lemon thyme chicken.

    How Long Can You Store this Sheet Pan Chicken

    Because you are working with protein it is best to only store it for up to three days in the fridge. You can store longer but that is something you need to use your best judgement on. 

    This is a fantastic recipe to use to meal prep. Just place your chicken and veggies in single serve containers for easy grab and reheat meals or lunch or dinner.

    Best Way to Reheat

    You can opt for the microwave if you want a fast and easy method. Just reheat until the chicken and vegetables are heated through. 

    But, if you want to do the oven just make sure that you cover your chicken and veggies with aluminum foil as you heat it up. This will help prevent the chicken and vegetables from over cooking and drying out as you reheat.

    One-Pan Lemon Thyme Chicken

    Tender, flavourful chicken drumsticks covered in a lemon/herb butter spread are roasted to perfection along with carrots, potatoes and green beans on one pan! You’ll love how easy it is to make and clean.

    Ingredients
     
     

    • 12 chicken drumsticks
    • 2 tbsp extra virgin olive oil
    • 2 ½ cups Yukon Gold potatoes diced
    • 1 cup green beans trimmed
    • 3 carrots peeled and cut into ¼ inch strips
    • zest of one lemon
    • juice from one lemon
    • 2 cloves garlic minced
    • 2 sprigs thyme leaves
    • ¼ cup butter
    • ½ cup chicken stock
    • salt and pepper

    Instructions

    • Preheat oven to 450°F.
    • In a large bowl, add the potatoes, carrots and green beans with olive oil, salt and pepper. Toss to combine. Spread on to a baking sheet in a single layer.
    • In a small bowl, mix together the butter, thyme, lemon zest, garlic, salt and pepper. Rub the butter mixture on the chicken drumsticks and place on top of the veggies.
    • In another small bowl, stir together lemon juice and chicken stock. Pour evenly on to the baking sheet.
    • Bake for 25 minutes or until chicken has reached 165°F on a meat thermometer. Serve hot.
