Chicken & Asparagus Salad

It’s official. Spring is here, but I don’t think Mother Nature got the memo. I woke up the other day to a yard of snow! Thankfully, the weather was nice for the next couple days so most of it melted. We have just a bit of snow left in the yard that needs to melt. I hope that is the end of it because I really want to take my winter tires off my vehicle!

Even if the weather isn’t fully cooperating, I’m still getting into spring mode in the kitchen. Spring means fresh flavours and lots of spring vegetables. Right now, I can’t get enough asparagus. It’s plentiful (and on sale) at the grocery store so I’m grabbing a bunch every time I go.

I was looking for recipe inspiration to use up my asparagus and I hit up my go-to recipe site, Chicken Farmers of Canada. They have loads of recipes perfect for spring. I encourage you to browse around when you have a minute and print out some yummy recipes to try. I choose this bright and fresh Chicken & Asparagus Salad to make for my family.

It does require a bit of extra prep work with all the chopping and cooking the asparagus and chicken, but it’s worth it in the end, I promise. My favourite part was the marinated chicken. It has an Asian flavoured sauce that is so yummy. My kitchen smelled wonderful while it was cooking.

    I served this salad as a meal because it was so big. It’s healthy and something you can feel good about eating!

    I also encourage you to look for the Raised by a Canadian Farmer mark on the chicken you buy at the grocery store. I think it’s important to know where your chicken comes from. Canadian chicken is raised to a high standard of food safety and animal care. If your store doesn’t have the mark on the chicken, consider speaking to the manager and telling them that it’s something you’d like to see!

    Chicken & Asparagus Salad

    A delicious spring salad packed with veggies, seasoned chicken and a tangy Sesame Ginger dressing.

    Ingredients
     
     

    • ½ lb asparagus trimmed
    • 2 tsp sunflower oil divided
    • 1 lb boneless skinless chicken breasts
    • 1 tsp toasted sesame oil
    • 1 clove garlic minced
    • 1 tbsp tamari sauce
    • 2 tsp rice vinegar
    • 1 head Romaine lettuce chopped
    • ½ green cabbage chopped
    • 1 carrot peeled and sliced thin
    • 2 orange peppers sliced thin
    • 2 green onions sliced thin

    Sesame Ginger Dressing

    • 3 tbsp sunflower oil
    • 4 tsp rice vinegar
    • 2 tsp water
    • ¼ tsp ground ginger
    • 1 clove garlic minced
    • 2 tsp ketchup
    • 2 tsp honey
    • 1 tsp lemon juice
    • ¼ tsp pepper
    • ½ tsp toasted sesame oil
    • ½ tsp sesame seeds
    • 2 tsp tamari sauce

    Instructions

    • Cut chicken breasts into ½ inch pieces and place in shallow bowl.
    • Whisk together sesame oil, garlic, rice vinegar and tamari sauce and pour over chicken. Marinate 1 hour in the fridge.
    • Add 1 tsp sunflower oil to a frying pan over medium-high heat. Add asparagus and saute for 5 minutes, turning often, until tender-crisp. Set aside to cool. Cut into ½ inch pieces.
    • Add 1 tsp sunflower oil to a frying pan over medium-high heat. Add chicken and marinade and saute until completely cooked. Set aside to cool.
    • Add Romaine lettuce, cabbage, carrots, green onions and orange pepper to a bowl. Mix in asparagus and chicken.

    Sesame Ginger Dressing

    • In a bowl, whisk together sunflower oil. rice vinegar, water, ginger, garlic, ketchup, honey, lemon juice, pepper, sesame oil, sesame seeds and tamari sauce. Pour over salad and toss to coat.
