It’s time to wave goodbye to wintertime with this gorgeous strawberries in the snow dessert. Anyone that knows me is aware that I’m a huge fan of the spring months. 

Not only does the weather start getting warmer after the bitter cold (always welcome!), but we start seeing daffodils blooming and light desserts start appearing. 

And that’s exactly where this delectable recipe comes in!

    This is an iconic recipe that has been passed down from generation to generation and is still one of my all-time favorites. My grandmother used to pull out this dessert every single Easter, and my sister and I would always chow down on our dinner to get our super-sweet reward.

    If you’ve never heard of it, let me quickly fill you in! 

    Strawberries in the snow combines angel food cake cubes with sugar and fresh strawberries. Just be warned that you’ll need to be slightly patient as the mixture needs to sit for at least an hour to soak up all the juices.

    Then, you’ll whip up the cream layer that represents the all-important snow! Plus, all you need to do is mix frozen whipped topping with powdered sugar and cream cheese to make the magic happen.

    When you have the cream and strawberry layer finished, you’ll want to add a layer of cake pieces on top and push a few pieces down into the cream mixture. To finish, combine the strawberry and sugar mix with a package of uber-juicy strawberry glaze before refrigerating.

    And that’s it! 

    Yep – it’s a no-bake recipe that’s perfect for those lazy days during the spring and summer months. You can even prep it the day before and pull it out at the end of a successful BBQ!

    Anything goes when dessert is this delicious.

    • Baked angel food cake
    • Cream cheese
    • Frozen whipped topping
    • Powdered sugar
    • Strawberries
    • Sugar
    • Strawberry glaze

    How to Make Strawberries in the Snow

    • Step One: Stir sliced strawberries and ½ cup sugar together.
    • Step Two: Chill the mixture in the fridge for at least an hour.
    • Step Three: After the strawberries have chilled and made some juice, stir in the strawberry glaze.
    • Step Four: In a mixer, beat the softened cream cheese, frozen whipped topping, and powdered sugar together until creamy.
    • Step Five: Spread the cream mixture in a 9 x 13-inch dish.
    • Step Six: Cut angel food cake into small one-inch pieces and place the cake on top of the cream mixture.
    • Step Seven: Gently push some of the cake pieces into the cream.
    • Step Eight: Top with strawberry mixture and chill in the fridge.
    • Step Nine: Serve and enjoy!

    What to Serve with Strawberries in the Snow

    Recipe Tips and Tricks

    • Don’t overmix your cream mixture but do make sure all lumps and bumps are fully mixed out!
    • Don’t be tempted to take the strawberry mix out of the fridge too soon. The longer you leave it, the more chance those delicious juices will have to form!
    • If you’re not sure when your cream mixture is ready, check it and make sure it has the consistency of Cool-Whip.

    Variations and Substitutions

    • If you want to add a bit of booziness to the recipe, throw a bit of red wine and cinnamon into the mix. This is a perfect alternative for the holiday season!
    • This recipe works beautifully with a few slices of fresh shortbread if you fancy something more substantial.
    • You can make your own angel food cake if you like, but I highly recommend using a mix as it’s usually extremely fluffy and far

    Storage Instructions

    You can leave your pan of strawberries in the snow covered with cling film or foil in the fridge for a couple of days. Any longer, and it might start to go overly soggy or develop a strange film!

    Can I Freeze?

    Unfortunately, this strawberries in the snow recipe doesn’t freeze well. So, I recommend enjoying it within a couple of days! And honestly, you’ll struggle to keep it around for long.

    Ingredients
     
     

    • 1 baked angel food cake I use a boxed mix for mine
    • 2 packages cream cheese 8oz/250g packages, softened
    • 1 tub frozen whipped topping 16oz tub, thawed
    • 2 cups powdered sugar
    • 1 quart strawberries thinly sliced
    • ½ cup sugar
    • 1 tub strawberry glaze 14oz tub

    Instructions

    • In a small bowl, stir sliced strawberries and 1/2 cup sugar together. Chill in the refrigerator for at least one hour.
    • After strawberries have chilled and made some juice, stir in strawberry glaze.
    • In a mixer, beat softened cream cheese, frozen whipped topping and powdered sugar together until creamy.
    • Spread cream mixture in a 9×13 dish. Cut angel food cake into small, 1-inch pieces and place the cake on top of cream mixture.
    • Gently push some of the cake pieces into the cream.
    • Top with strawberry mixture. Chill in the refrigerator.

    I reserve approximately 1/2 cup of the cream mixture to pipe on top of the dessert for decoration. Can be stored in the refrigerator for up to 3 days.

      I made two of them in one week one for my granddaughter’s and one for my grandson’s birthday. My family love it. I couldn’t find the tub of glaze so I used the packet. Otherwise I didn’t make any other change.
      We love this recipe.

      Can you put a graham cracker crust in the bottom layer as well?

        1. Ok made this w/o the Graham cracker crust and it was a hit with my kids! I loved it as well!
          But we can’t find the strawberry glaze in Canada so I bought the powdered packet and mixed it. It was delicious. And you’re right, The Angel food cake mix was easy and so fluffy and flavourful! Making this again soon!

    10. Do you thaw the whip cream, or mix it right out of the freezer. I like to make this but don’t know what to do.

        Thanks for pointing that out! I’ve updated the recipe card to be more clear. It should be frozen whipped topping (Cool Whip) that’s been thawed.

      Hi! I made this the first time and thought it was delicious, except for a slightly off taste in the strawberry glaze. So the second time I made it, I added 1/8 tsp of almond extract to the glaze before adding it to the strawberries. It seriously made all the difference. There was no artificial aftertaste, and the almond extract was just a soft undertone, not overpowering at all.

      I make this but use dark chocolate cake mix and use milk instead of water for cake. I call it strawberries in the dirt everyone loves it. Get a request at every family get together.
