- 3 cups semisweet chocolate chips
- ½ tbsp coconut oil
Instructions
- In a large mixing bowl, fold together the sweetened condensed milk, peppermint extract and powdered sugar until a dough begins to form.
- Once the dough begins to pull away from the sides fo the bowl, dump the mixture on a surface lightly dusted with powdered sugar.
- Knead the dough by hand for a few minutes and then use a rolling pin to roll out the dough into a sheet about ¼ inch thick.
- Using a 2 inch cookie cutter or glass with a similar sized diameter, cut out 15 patties and place them on a baking sheet lined with parchment paper or wax paper.
- Transfer the peppermint to the freezer for 30 minutes.
- After it has chilled, melt the chocolate and coconut oil in a microwave safe bowl for 1 minute at 50% power. Stir and continue to heat for 30 seconds at a time (at 50% power) until completely melted.
- Dip each peppermint patty in the chocolate and then return them to the baking sheet.
