This easy potato soup recipe is filled with chunks of potato (and you don’t even have to dice them!). The cream of chicken soup, sour cream, and shredded cheese make this a great recipe to cook when you’re hungry but don’t have time to cook.

  • Frozen Hash Brown Potatoes: I used Ore-Ida Diced Hash Brown Frozen Potatoes. Using frozen potatoes makes this soup quick, easy, and convenient. 
  • Onion: I used a yellow onion, but white will work great also.
  • Chicken Broth: This is the base of the soup. Either broth or chicken stock will work perfectly. 
  • Cream of Chicken Soup: This ingredient contributes to the soup’s creamy texture and rich flavor.
  • Butter: Use unsalted butter so you can control how salty it tastes. 
  • Sharp Cheddar Cheese: This cheese adds a wonderful sharpness and creaminess to the soup, giving it a nice flavor boost.
  • Sour Cream: Sour cream adds tanginess and richness to the soup and helps create a smooth and creamy texture.

    • Step One: Combine the frozen hash brown potatoes, diced onion, chicken broth, and cream of chicken soup in a large pot.
    • Step Two: Add the butter to the pot and place it over medium heat. Cook until the hash browns are tender and heated, about 15-20 minutes.

    Variations and Substitutions

    • Use vegetable broth instead of chicken broth. 
    • Instead of cream of chicken soup, use cream of mushroom soup. 
    • Use frozen diced potatoes or shredded hashbrowns.
    • If you don’t have fresh onion, substitute it with one tablespoon of onion powder or ¼ cup of dried minced onions.
    • Greek yogurt is the perfect substitute for sour cream. 

    Storage Instructions 

    Hash Brown Potato Soup should be stored in an airtight container in the refrigerator. Leftovers can be kept for 3- 4 days.

    To reheat the soup, microwave it for a few minutes or heat it over medium heat on the stovetop until warm.

    While you technically can freeze Hash Brown Potato Soup, the texture may change upon reheating due to the potatoes in the soup.

    Recipe Tips and Tricks

    • Stir the potatoes frequently to prevent burning. 
    • Use unsalted butter to prevent the soup from tasting too salty. 
    • Cook the soup on low when you add the cheese and sour cream. 
    • Sprinkle some cooked bacon or crumbled breakfast sausage in the soup to give it a flavor.

    Can I Use Fresh Potatoes?

    Yes, you can use fresh potatoes instead. You’ll need to peel, grate, or dice the potatoes and then wash them to remove the excess starch. I love using frozen hash brown potatoes because they’re quick and easy.

    Do I Need To Thaw The Hash Browns?

    No, you do not need to thaw the hash brown potatoes before you add them to the soup. The frozen hash browns can go directly into the pot, and the heat from cooking will thaw them.

    Crockpot Instructions

    Crockpot potato soup is also delicious, making this easy recipe even more effortless. Remember, the cooking time depends on the temperature at which you cook the soup. Add everything except the sour cream to the slow cooker and cook it on low for 4-6 hours or high for 2-4 hours. Then, 30 minutes before you serve it, add the sour cream and stir it well. 

    How To Make Smoother

    If you don’t like the pieces of potatoes, use an immersion blender to mix everything. If you don’t have an immersion blender, puree everything with a food processor. 

    How To Thicken

    Adding heavy cream or a block of cream cheese is the best way to thicken the potato soup. It will mix perfectly with all the other flavors and keep it hearty and creamy.

      Totally delicious!! I had to substitute cream of mushroom soup which was fine. Also added shell macaroni with the cheese packet and some CheezWhiz. Will definitely be my go-to recipe!
