Instructions
In a large pot or Dutch oven, combine the frozen hash brown potatoes, diced onions, chicken broth and cream of chicken soup.
Add the butter to the pot and place it over medium heat. Cook until the hash browns are tender and heated through, about 15 to 20 minutes.
Reduce the heat to low, then stir in the shredded cheese until it's fully melted.
Add the sour cream, salt, and pepper, stirring until everything is well combined and the soup is heated through. Serve hot.
