Apple Butter Cake

Apple Butter Cake is one of those desserts that fills your kitchen with the warm, cozy scent of cinnamon and spice while it bakes. It’s soft, moist, and full of rich apple flavor that tastes like fall in every bite. This simple sheet cake is perfect for sharing, whether you’re hosting a family dinner or want a little something sweet with your afternoon coffee.

The secret ingredient is the apple butter. It adds a deep, spiced apple flavor and keeps the cake extra tender. You can finish it with a simple cinnamon glaze or take it up a notch with a layer of cream cheese frosting. Either way, this is a dessert that feels homemade in the best possible way, sweet, comforting, and full of cozy fall flavor.

If you have homemade apple butter, this recipe is the perfect place to use it. I often use my own recipe from the site, and it gives the cake such a rich, spiced flavor. Store-bought apple butter works just as well, especially if you’re short on time. I’ve also tried this apple butter spice cake with caramel apple butter, and it was absolutely delicious. That hint of caramel adds a lovely depth of sweetness that pairs perfectly with the warm spices in the cake.

Ingredients

  • All-purpose flour: Spoon and level it instead of scooping to keep your cake light and fluffy.
  • Baking powder: Check the expiration date before using. Fresh leavening makes all the difference.
  • Baking soda: Make sure it’s fully mixed into the dry ingredients so there aren’t any uneven spots in the cake.
  • Salt: Don’t skip it. A little salt helps bring out all the warm flavors.
  • Cinnamon: Use a good-quality cinnamon for the best flavor.
  • Nutmeg: Freshly grated nutmeg adds a lovely aroma to the cake.
  • Cloves: Even at ½ teaspoon, this spice packs a punch and gives the cake that signature apple butter flavor.
  • Unsalted butter: Let it soften at room temperature before creaming with the sugar.
  • Brown sugar: Pack it firmly into the measuring cup so you get the right amount of moisture and sweetness.
  • Large eggs: Let them come to room temperature so they mix evenly into the batter.
  • Apple butter: Homemade is wonderful here if you have it, but store-bought or caramel apple butter both work beautifully.
  • Sour cream: Full-fat gives the best texture.
  • Vanilla extract: Use pure vanilla extract for the best flavor.
  • Powdered sugar: Sift it before making the glaze to avoid lumps.
  • Milk: Add a little at a time until you reach your desired glaze consistency.
  • Cinnamon (for glaze): Stir it in last so the spice stays fragrant and fresh.

Variations and Substitutions

  • Add nuts: Stir in chopped pecans or walnuts for a little crunch and a nutty contrast to the soft cake.
  • Try a different glaze: Swap the cinnamon glaze for a maple or apple cider glaze for an extra touch of fall flavor.
  • Frost it instead: Cream cheese frosting makes this cake taste like a cozy fall version of carrot cake.
  • Make it spicier: Add a pinch of ginger or allspice for a bolder spice blend.
  • Use apple pie spice: Replace the cinnamon, nutmeg, and cloves with two teaspoons of apple pie spice for an easy shortcut that still delivers that cozy, spiced apple flavor.
  • Use Greek yogurt: If you don’t have sour cream, plain Greek yogurt works just as well and keeps the cake moist.
  • Gluten-free option: Substitute your favorite 1:1 gluten-free baking flour blend.
  • Add fruit: Fold in a handful of finely chopped or grated apples for extra texture and sweetness.
  • Caramel twist: Try using caramel apple butter for a deeper, richer flavor. It’s a small change that makes a big difference.

Storage Instructions

  • Room Temperature: Keep the cake covered tightly with plastic wrap or in an airtight container for up to 3 days. If it’s glazed, make sure the glaze has fully set before covering it.
  • Refrigerator: Store leftovers for up to 5 days. The cool temperature helps keep the cake moist, especially if you’ve used cream cheese frosting. Bring to room temperature before serving for the best texture.
  • Freezer: Wrap slices or the whole cake (without glaze or frosting) in plastic wrap, then in foil, and freeze for up to 3 months. Thaw overnight in the fridge and glaze just before serving.
  • Make Ahead Tip: This cake tastes even better the next day once the flavors have had time to meld, so it’s perfect for baking ahead before a gathering or holiday meal.

Recipe Tips and Tricks

  • Use room temperature ingredients: Butter, eggs, and sour cream blend more smoothly when they’re not cold, giving you a lighter, more even crumb.
  • Don’t overmix: Once you add the flour mixture, mix just until combined. Overmixing can make the cake dense.
  • Check early: Oven temperatures vary, so start checking for doneness a few minutes before the recommended baking time. The toothpick should come out clean or with just a few moist crumbs.
  • Cool completely before glazing: If the cake is even a little warm, the glaze will soak in instead of setting nicely on top.
  • Warm it up before serving: A quick 10-second zap in the microwave makes each slice taste like it just came out of the oven.
  • Add a garnish: Sprinkle a little cinnamon sugar or a few chopped nuts over the glaze for a pretty finish and extra flavor.
