Quick Slice Cake

Have you ever made a Quick Slice Cake? It’s SO easy to prepare and even easier to serve. It’s an older recipe from simpler times. The first piece even comes out perfectly every time.

Using a cookie or baking sheet with edges is where it’s at. It’s a breeze to slice the cake (hence the name) and serve. It’s a large cake and makes about 16 slices of cake. Lots to feed a group or save for leftovers.

I love that you can customize this cake by changing up the topping. I used cherry pie filling because it’s my favourite. You could use any pie filling you like. Blueberry pie filling is also delicious. In the fall months, you could make an Apple Quick Slice Cake with apple pie filling. Yum!

Ingredients

To make this Quick Slice Cake, you’ll need these ingredients.

  • Shortening
  • Sugar
  • Vanilla extract
  • Almond extract
  • Eggs
  • All-purpose flour
  • Baking powder
  • Pie filling of your choice
  • Powdered sugar (optional)

How to Make

It’s easy peasy!

  1. Start by preheating the oven to 350F. Grease a cookie sheet.
  2. Add shortening and sugar to a mixing bowl. Cream together with a mixer until combined. Add eggs, almond extract and vanilla extract. Stir in flour and baking powder.
  3. Spread 2/3 of the batter on the cookie sheet. Spread the pie filling on top. Drop remaining batter by spoonfuls on top.
  4. Bake for 40 minutes. Sprinkle with powdered sugar while still warm.
  5. Cut into slices and savor every sweet bite!

  • 1 cup shortening
  • 2 cups sugar
  • 1 tsp vanilla
  • 1 1/2 tsp almond extract
  • 4 eggs
  • 3 cups all-purpose flour
  • 1/2 tsp baking powder
  • 2 540ml cans pie filling
  • Powdered sugar, for garnish, optional

Instructions

  1. Preheat oven to 350F. Grease a cookie sheet.
  2. Add shortening and sugar to a mixing bowl. Cream together with a mixer until combined. Add eggs, almond extract and vanilla extract. Stir in flour and baking powder.
  3. Spread 2/3 of the batter on the cookie sheet. Spread the pie filling over top. Drop remaining batter by spoonfuls on top.
  4. Bake for 40 minutes. Sprinkle on powdered sugar while still warm.

Notes

Make sure you use a cookie sheet that has sides on it.
