No Peek Chicken

No Peek Chicken is an easy to prepare, fuss-free chicken and rice dinner your family will love. I’m not even sure the origin of this recipe as it’s been one that has been around for what seems like forever. I can totally see why. It’s simple to make and so delicious.

No Peek Chicken

This No Peek Chicken is so flavorful and always a hit with my family every time I make it. 

It’s called No Peek Chicken because you put all the ingredients in your casserole dish and cover it for a couple hours in the oven. No peeking underneath to check on it!

    My sister shared this recipe with me and I was tempted to check on the chicken. 2.5 hours seems like a long time to bake, but she told me to trust her and not look. I listened to her advice and was pleasantly surprised at the result. Juicy, tender chicken bakes right on top of a bed of rice. Delish!

    We love Canadian chicken in our home and eat it a few times a week. Not only is it a healthy source of protein, but it’s also so versatile. Chicken recipes are plentiful on my blog and also on the Chicken Farmers of Canada recipe index. Be sure to check it out!

    Did you know that Canadian chicken is grain-fed, free of added hormones and steroids. It’s also raised according to nationally-set, high food safety and animal care standards. That’s one big reason why I only choose Canadian chicken when I’m feeding my family. I want a quality product for the most important people in my life.

    So how do you know for sure that you are getting Canadian chicken? Easy peasy. Look for the Raised by a Canadian Farmer logo on the packaging. I found this package of chicken at our local Walmart Supercentre.

    If your store doesn’t have the logo, make sure to talk to a manager and tell them that you’d like to see it on the packaging. The more stores that get on board, the better!

    How to Make No Peek Chicken

    Start by greasing a 9×13 casserole dish with cooking spray. 

    In a mixing bowl, stir together long grain rice, cream of mushroom soup, cream of celery soup, water, parsley and curry powder. Spread the mixture in the casserole dish.

    Place 6 chicken breasts on top of the rice mixture.

    Sprinkle onion soup mix on top of the chicken breasts.

    Cover the casserole dish with aluminum foil. Bake for 2.5 hours at 450F. No peeking!

    After the chicken comes out of the oven, you can sprinkle on fresh parsley for a pop of colour if you wish.

    To serve, add rice to a bowl or plate and place a chicken breast on top. Eat and enjoy!

    No Peek Chicken is a hearty main course that pairs great with just about anything. I have some suggestions below:

    • Cauliflower in cheese sauce
    • Dinner rolls with butter

    Ingredients
     
     

    • 6 boneless, skinless chicken breasts
    • 4 cups long grain rice uncooked
    • 1 can cream of mushroom soup 284ml can
    • 1 can cream of celery soup 284ml can
    • 1 can cold water 284ml can
    • 1 tsp dried parsley
    • ½ tsp curry powder
    • 1 packet onion soup mix
    • fresh parsley chopped, for garnish, if desired

    Instructions

    • Preheat oven to 450°F. Grease a 9×13 inch casserole dish.
    • In a mixing bowl, stir together rice, cream of mushroom soup, cream of celery soup, water, parsley and curry powder. Spread on the bottom of the casserole dish.
    • Place chicken breasts on top of rice mixture.
    • Sprinkle onion soup mix on top of chicken breasts.
    • Cover with aluminum foil. Bake for 2 ½ hours. No peeking!
    • Sprinkle on fresh parsley, if desired. Serve hot.

      Worst thing I have made from here 21/2 hours on 450 way to much the rice was dry and crispy not edible. The chicken dried out and no I didn’t peek I followed the directions exactly as written.

      I think the 4 cups rice uncooked might be an error…maybe it should be 2? This was really dry.
