They aren’t crispy, but they are soft and tender. They practically melt in your mouth. The lemon flavour is the most dominate, but you can also tastes hints of garlic and oregano. They all blend together to make a mouthwatering dish.

This recipe pairs beautifully with chicken. You can even use some of the juice in the pan to flavour the chicken or to use as a dipping sauce.

Lemon Roasted Potatoes

Quick to prepare and come out of the oven hot and full of lemony deliciousness.

Ingredients:

  • 5 large white potatoes, cut into wedges
  • 1 cup water
  • 1/3 cup extra virgin olive oil
  • 1/2 cup lemon juice
  • 3 cloves garlic, minced
  • 2 1/2 tsp dried oregano
  • 1 tsp salt
  • 1 tsp pepper

Directions:

  1. Preheat oven to 325F.
  2. Spread potatoes in a greased 9×13 pan.
  3. Add remaining ingredients to a bowl and whisk to combine. Pour evenly over potatoes.
  4. Bake 1 hour, turning once or twice during cooking. Serve hot.
