Lime Cheesecake Parfait

These Fibre 1 Cheesecake Bars are irresistible! They are soft and sweet with a rich, creamy cheesecake filling inside. I love the tangy sweetness of the Key Lime flavour.
And who can resist chocolate? Not this girl. If you are a chocolate lover like me, try one (or two!) of the chocolate flavour. They are pure decadence with a smooth and velvety chocolate cheesecake inside.
Did you know that the Fibre 1 Cheesecake Bars are only 150 calories and have 20% of your daily fibre? I’m always looking for ways to add more fibre to my diet.
Lime Cheesecake Parfait
I love anything cheesecake and decided to treat myself (and my family) with a delicious dessert inspired by the Fibre 1 Cheesecake Bars in Key Lime. My daughter recently celebrated her 18th birthday and I wanted to create a special meal that we could enjoy together in her honour.
I made Lime Cheesecake Parfaits for dessert. I couldn’t believe how quickly my family gobbled them up! It’s a good thing they are simple to make because I immediately had requests to make more. It made me happy to see them enjoying one of my recipes.
This dessert is no-bake which is great for summer. I know I don’t feel like turning on the oven when it’s 30°C+ outside.
The bottom layer is crumbled Fibre 1 Cheesecake Bars in Key Lime. Use one in each parfait dish. The cheesecake filling is a mixture of cream cheese, lime juice, lime zest, sugar, vanilla and whipped topping. They are finished off with more crumbled Fibre 1 Cheesecake Bars. Add a lime slice to each dish if you want to get extra fancy!
It’s also ready to serve right away or you can leave them in the fridge to chill until it’s time for dessert.

Lime Cheesecake Parfait
Cheesecake goes tropical! Try this dessert in a glass at your next fancy dinner party or family dinner where you want to feel special.
Ingredients
- 5 Fibre 1 Key Lime Cheesecake Bars
- 2 8 oz packages cream cheese, softened
- 3 tbsp lime juice
- zest of 1 lime
- 1 tsp vanilla extract
- 1/2 cup sugar
- pinch of salt
- 1 cup whipped topping
Instructions
- Crumble 4 Fibre 1 Key Lime Cheesecake Bars and evenly divide among 4 parfait dishes. I used 1 bar per dish.
- In a mixing bowl, beat on medium high speed the cream cheese, lime juice, sugar, vanilla extract, salt and lime zest until smooth. Stir in whipped topping until smooth.
- Pipe with a pastry bag and tip (or simply use a spoon) to add cheesecake mixture to the parfait dishes. Crumble the remaining Fibre 1 bar and add to each dish for garnish. Refrigerate if not serving right away.
