Asian Chicken Noodle Soup

Recently I participated in a Simply Asia recipe challenge where I had to create three dishes. My side dish recipe is this Asian Chicken Noodle Soup. Think comfort food with a kick! I loved the addition of fresh ginger and the extra layers of flavour it provided. This to me is more something I’d make in the fall or winter, but we all had summer colds (blech) and this soup really hit the spot! Plus, they say garlic is healing!

I used Garlic Basil flavoured noodles, but you could really use any variety. Add in your favourite flavour. Maybe curry flavour for some heat?

I might try and make this recipe in the crockpot and see how it compares to the stovetop method. I use my crockpot more in the winter though. It’s stored away in the summer months!

Asian Chicken Noodle Soup

The most comforting soup with an Asian twist! Add some street noodles and sweet ginger garlic seasoning for a delicious meal.

Ingredients
 
 

  • 1 chicken breast cooked and roughly chopped
  • ¼ cup green onions chopped
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 1 tbsp extra virgin olive oil
  • ½ tsp Simply Asia Sweet Ginger Garlic Seasoning
  • 1 tbsp fresh ginger minced
  • 2 cloves garlic minced
  • 4 cups of chicken broth
  • 1 package Simply Asia Singapore Street Noodles in Garlic Basil

Instructions

  • Heat oil in a large pot over medium heat. Add in green onions, carrots, celery, ginger, garlic and Sweet Ginger Garlic Seasoning. Cook for 5 to 7 minutes, stirring occasionally.
  • Add chicken broth and chicken. Then add the noodles along with the seasoning package and ½ tsp of the sauce that comes with the noodles. Stir and bring to a boil.
  • Reduce heat to minimum and cover. Simmer for an hour.
  • Garnish with chopped green onions and serve hot.

      I love any type of noodle soup, and believe it or not, I am highly allergic to ginger, although I love it….it makes me break out into hives…I have never met anyone else who was allergic to it….

      sounds wonderful, and like you said, it would be especially good when you are sick with the addition of ginger which not only has healing powers but settles your stomach too.

    9. I would love to try this Asian noodle soup. Sometimes I get tired of canned soups. This is more special and homemade. Im sure the fresh ginger really sets it off . Thanks for the recipe.
