I don’t know about you, but I love anything lemon! Give me lemon desserts over other fruit desserts any day.
These Lemon Cheese Bars are divine. Don’t worry, the lemon flavor is not overpowering. It’s just a perfect hint of sweet lemon with a bit of tang. So yummy!
And don’t they just scream spring? I think so….
The bottom layer is combination of boxed cake mix, an egg and oil. I used yellow cake mix here, but if you can’t find it you could substitute another cake mix flavor. White cake mix, lemon cake mix or French vanilla cake mix would also be good.
The top layer is my fave – it’s a lemony cheesecake topping. OMG. It’s rich and creamy and will practically melt in your mouth.
My fiancé, Matty, enjoyed the last batch I made and gave them an enthusiastic thumbs up. That guy is brutally honest and will tell me when something doesn’t taste good.
Lemon Cheese Bars Ingredients
To make this easy dessert, you’ll need to round up a few ingredients.
- Yellow cake mix
- Cream cheese
- Sugar
- Lemon juice
- Vegetable oil
- Egg
You only use the actual cake mix from the box. You don’t need to bake the cake or anything like that.
How to Make Lemon Cheese Bars
Begin by preheating the oven to 350F.
Add the cake mix, egg and oil to a bowl and mix together until it reaches a crumbly consistency. Reserve 1/2 cup of the mixture for later. Pat the remaining mixture into an ungreased 9-inch square baking pan. Bake for 15 minutes and then remove from the oven.
While the first layer is in the oven, start preparing the second layer. In another bowl, beat cream cheese, lemon juice, sugar and egg until smooth. Spread in pan over baked layer. Sprinkle with reserved crumbs.
Bake for 20 minutes. Let cool before cutting into squares.

- 1/3 cup sugar
- 1 tsp lemon juice
Instructions
- Preheat oven to 350F.
- Add cake mix, 1 egg and oil to a bowl and mix together until its a crumbly consistency. Reserve 1/2 cup of the mixture. Pat remaining mixture into an ungreased 9-inch square baking pan. Bake for 15 minutes. Remove from oven.

Not sure I understand the recipe. Do eggs go into the cake mix or into the cream cheese mixture? Or both. The ingredients aren’t in any particular order in this recipe.

I’m interested in making this for an upcoming potluck. Have you ever doubled everything and done the recipe in a 9 x 13 pan? Have the results been pretty much the same if you have? Thanks for any help you can give.
I haven’t, but it should work. You might have to add to the baking time though.
How many ounces of cream cheese?
An 8oz package will work.

These were so good! I added lemon zest to the cream cheese to give it more lemon kick. Love these bars!
