You typically see Chicken Salads served cold. That’s fine and dandy. They are delicious. But Hot Chicken Salad? OMG. So so good! 

If I had to choose between hot or cold, I’d choose hot any day. Once you try this easy recipe, you’ll see why. 

The best part? You can use up chicken leftovers to create a mouthwatering meal for your family.

National Chicken Month

Did you know that it’s National Chicken Month in Canada? We eat chicken all the time in our home, but it’s nice to see that it’s celebrated in the month of September. 

Not only are we celebrating how yummy chicken is to eat, but also a few other important items. For example, the hard working Canadian chicken farmers and all they do to bring us delicious and healthy chicken to our tables. It’s a great time to appreciate and thank a Canadian chicken farmer for all they do for us. Without them, we wouldn’t be able to enjoy an affordable and tasty protein to include in our favourite recipes.

Hot Chicken Salad Ingredients

There’s nothing fancy about this salad. Just simple and wholesome ingredients that are easy to find at your local grocery store.

You’ll need:

  • Cooked chicken (I used boneless, skinless chicken breasts – my favourite cut!)
  • Celery
  • Onions 
  • Green pepper
  • Butter
  • Lemon juice
  • Almonds
  • Mayonnaise
  • Salt & pepper

Make use of chicken leftovers with this salad. You can use dark meat if you prefer, too. If you are serving chicken this Thanksgiving, this recipe is a keeper to get the most of your meal for the days to follow the holiday.

When you’re buying your groceries next for this recipe, keep an eye out for the “Raised by a Canadian Farmer” logo on the packages of chicken. That lets you know where your chicken comes from and it stands for high quality chicken that is both fresh and safe.

How to Make Hot Chicken Salad

Start by melting the butter in a large skillet over medium heat. The veggies cook in the butter adding loads of flavor. Stir in the onions, green peppers and celery and saute for 5 minutes. You don’t want the veggies to brown though so keep an eye on the pan and stir often.

Stir in the cooked chicken (not raw!), lemon juice and salt. Reduce the heat to low and cover the skillet. Heat for 5 minutes.

Take the skillet off the heat and mix in mayonnaise and almonds. Give it a seasoning of salt and pepper to taste and serve away.

How to Serve Hot Chicken Salad

There’s a few different ways you can enjoy this Hot Chicken Salad recipe.

  • Serve it alone in a bowl
  • Add it to a pita or wrap
  • Make a sandwich
  • Serve it on a bed of rice

You can also eat it cold. I know it’s called Hot Chicken Salad, but if you refrigerate it and want to eat it right away that’s fine, too. I prefer it hot, but it still tastes good cold.

When to Serve Hot Chicken Salad

We enjoyed it for lunch here. I sent my fiance’s parents home with a container of it as well. It’s a great recipe to use for kid’s lunches because you can prepare it ahead of time and dish some out before they head off to school.

With the busy season now upon us, recipes like this one are keepers. I try to stay organized and prepare as much as I can ahead of time so I’m not too overwhelmed in the mornings. I’m super groggy until I get a few cups of coffee into me!

A delicious way to use up leftover chicken to enjoy on a cold day. Served hot, this easy salad is made with tender chicken, celery, green pepper and slivered almonds enveloped in a creamy flavourful dressing.

Ingredients

  • 1/4 cup onions, minced
  • 2/3 cup green pepper, chopped
  • 3 cups celery, chopped
  • 1/4 cup butter
  • 4 cups chicken, cooked, cut into chunks
  • 2 tbsp lemon juice
  • 1 tsp salt
  • 1 cup mayonnaise
  • 1 cup almonds, slivered
  • Salt and pepper, to taste

Instructions

Add butter to a skillet over medium heat and melt. Stir in onions, green peppers and celery. Saute for 5 minutes.

Stir in cooked chicken, lemon juice and salt. Reduce heat to low and cover for 5 minutes.

Remove skillet from heat and stir in mayonnaise and almonds. Season with salt and pepper. Serve hot.

Notes

I used boneless skinless chicken breasts, but any cut of chicken would be fine.
