We’ve been having quite a few nights where we just eat appetizers for dinner. We can’t go out to party so we bring the party in with some delicious food. These Spicy Potato Skins have been on the menu a few times over the last couple months.
They take a little bit of prep work because you need to bake the potatoes and scoop out the inside. Save the insides for mashed potatoes for tomorrow’s dinner!
They are filled with spices, cheese, bacon and topped with Litehouse® Hatch Chile Ranch Dressing & Dip. OMG soooo good. To be honest, I don’t like to share them because they are that yummy!
I love those crispy potato shells with all that yummy-ness inside. Even Matty, who isn’t a fan of anything to spicy, enjoyed them. He picked off the jalapenos though! You could leave them off if you want them to be over the top hot. I didn’t think they were, but everyone’s tastes are different.
