Red Velvet Desserts
Just the words Red Velvet can make your mouth water! Not to mention the strikingly unique red color that makes desserts and recipes look amazing! This delicious flavor is often thought of as a chocolate flavor or Devil’s Food Cake. However, they are two different flavors and/or cakes. Devil’s Food cake uses chocolate (contains cocoa butter) as an ingredient while Red Velvet uses cocoa (has no cocoa butter).
Traditional Red Velvet Cake is made with cocoa powder, buttermilk, and vinegar whereby a chemical reaction between the ingredients produces the famous red (maroon) coloring. During World War II, beetroot was often (and still is) used to enhance the coloring and to help retain moisture. Adams Extract was credited with bringing the red food coloring to the recipe that adds the unique and striking red color.
Another difference between chocolate cake and a Red Velvet cake is the frosting. Red Velvet cakes are commonly frosted with Cream cheese or buttercream frostings while any type/flavor frosting compliments chocolate cake.
