Pineapple Salad

This Pineapple Salad is a creamy, chilled gelatin salad made with crushed pineapple, lemon gelatin, whipped cream, and a surprising touch of cheddar cheese. It is light, fluffy, sweet, with a hint of tang, and perfectly refreshing after it has set in the fridge.

This recipe was my great-grandmother’s, and in our family, it was never called Pineapple Salad. It was always just Nanny’s salad. It showed up at every holiday dinner without fail, sitting on the table alongside the ham and all the other familiar dishes. Seeing it there felt comforting, like a tradition you could count on, no matter how big or small the gathering was.

Nanny passed away in the mid-1980s at 90, but this recipe has kept her memory alive in a really meaningful way. She was very special to all of us, and my mom was especially close to her. It is more than just a recipe. It is a reminder of family, holidays, and the people who shaped them.

    • Lemon gelatin: Make sure it fully dissolves in the boiling water so it sets properly.
    • Boiling water: Hot water is essential to completely dissolve the gelatin. If the water is not hot enough, the salad may not firm up.
    • Pineapple juice: Use the juice reserved from the canned pineapple and chill it well before adding. The cold juice helps the gelatin set faster.
    • Crushed pineapple: Drain the pineapple thoroughly. Too much liquid can keep the salad from setting and make it watery.
    • Shredded cheddar cheese: Sharp cheddar works best for flavor. Shred it yourself if you can, since pre-shredded cheese does not blend in quite as smoothly.
    • Whipping cream: Whip the cream just until soft peaks form. Overwhipping can make it grainy and harder to fold into the gelatin mixture.

    How to Make Pineapple Salad 

    • Step One: Dissolve the lemon gelatin in boiling water, stirring for 1 minute.
    • Step Two: Stir in the cold reserved pineapple juice. Let cool in the fridge until syrupy, 1 to 1 ½ hours.
    • Step Three: Fold in the crushed pineapple, cheddar cheese, and whipped cream.
    • Step Four: Pour into a large bowl or dish lightly coated with cooking spray, and chill in the fridge until firm, 4 to 6 hours.
    • Step Five: Top with shredded cheddar cheese, if desired.

    Variations and Substitutions

    • Try a different gelatin flavor: Lime gelatin is a popular swap and pairs really well with pineapple. Orange gelatin also works if you want a sweeter, more dessert-like version.
    • Use Colby or mild cheddar instead of sharp: If sharp cheddar feels too bold, Colby or mild cheddar will give you the same creamy texture with a softer flavor.
    • Use canned pineapple chunks instead of crushed pineapple: They provide a chunkier texture. Don’t forget to drain the can and save the juice.
    • Swap the whipped cream for whipped topping: If you need a shortcut, use an equal amount of whipped topping (try this homemade Cool Whip) instead of freshly whipped cream. Just fold it in gently.
    • Add cream cheese for a richer texture: For a creamier, more dessert-like salad, beat 4 ounces of softened cream cheese until smooth, then fold it into the whipped cream. It adds richness and makes the salad a little more decadent.
    • Add a little texture: Stir in coconut or finely chopped nuts, such as pecans or walnuts, for a bit of crunch.
    • Make it extra fluffy: Fold in an extra quarter cup of whipped cream for a lighter, more mousse-like texture.

    Storage Instructions

    • Refrigerator: Store pineapple salad covered in the fridge for up to 3 days. Keep it tightly wrapped so it does not absorb other fridge odors.
    • Make Ahead: This salad is perfect to make ahead, since it needs plenty of time to chill and set. You can prepare it the day before serving and add the cheese garnish just before bringing it to the table.
    • Freezer: Freezing is not recommended. Gelatin and whipped cream do not thaw well; the texture will become watery and grainy once defrosted.

    Recipe Tips and Tricks

    • Do not use fresh pineapple: Fresh or raw pineapple contains enzymes that prevent gelatin from setting properly. Stick with canned pineapple, which has been heat-processed, so the salad will firm up.
    • Chill the juice first: Make sure the pineapple juice is very cold before stirring it into the gelatin. This helps the mixture cool and thicken more quickly.
    • Wait for the syrupy stage: Let the gelatin mixture chill until it has a syrup-like consistency before folding in any ingredients. If it is too warm, the whipped cream will melt, and the salad will not set properly.
    • Drain the pineapple thoroughly: Press out as much liquid as possible from the crushed pineapple. Extra moisture can prevent the salad from firming up.
    • Fold gently: Use a spatula to fold slowly, keeping the mixture light and fluffy. Stirring too vigorously will knock the air out of the whipped cream.
    • Lightly grease the dish: A quick spray of cooking spray or a drizzle of olive oil rubbed into the bowl makes it easier to scoop or unmold the salad once it has set.
    • Give it enough chill time: Even if it feels firm on top, this salad needs several hours to fully set. For best results, let it chill overnight before serving.

    • 1 box lemon gelatin 3oz/85g box
    • 1 cup boiling water
    • 1 cup well-chilled pineapple juice use the juice from the can of crushed pineapple
    • 1 can crushed pineapple drained very well, reserve the juice, 540ml or 20oz can
    • 1 cup shredded cheddar cheese plus extra for garnish
    • 1 cup whipping cream whipped to soft peaks

    Instructions
