Lemon Fluff
Lemon Fluff is creamy, lemony, a little tangy, and packed with all the good stuff like pineapple, mini marshmallows, and whipped topping. It has that old-fashioned dessert salad feel that I absolutely love, especially when it’s cold and fluffy straight from the fridge.

The lemon gelatin and pudding give it lots of bright lemon flavor without making it too tart, and the cottage cheese adds a bit of texture without taking over. I’d happily bring this one to a potluck or summer get-together. It’s also the kind of thing I keep sneaking spoonfuls of every time I walk past the fridge.
My love for fluff salads goes way back to my Nanny’s Pineapple Cheese Salad. She made it for pretty much every holiday when I was growing up, so to me, it was just one of those things that belonged on the table. I can still picture it sitting there with all the other holiday dishes, and of course, I always had to have some.
Even now, recipes like this Lemon Fluff take me right back to those holiday dinners. I love that they’re a little old-fashioned, a little quirky, and completely nostalgic. They may be called “salads,” but we all know they’re really an excuse to eat dessert with dinner.

- Lemon gelatin powder: This gives the salad its bright lemon flavor and helps everything set. Stir it into the boiling water until you can’t see any granules before adding the cold water.
- Boiling water: The hot water is important for fully dissolving the gelatin. If it isn’t dissolved well at this stage, you can end up with undissolved bits in the finished salad.
- Cold water: This brings the temperature of the gelatin mixture down so it can start thickening in the fridge before the creamy ingredients are added.
- Instant lemon pudding mix: The pudding makes the lemon flavor stronger and gives the fluff a creamier, thicker texture. Make sure you’re using instant pudding since it thickens without cooking.
- Whipped topping: This gives the salad its light, creamy texture. Make sure it’s completely thawed so it folds smoothly into the lemon mixture. Make your own homemade Cool Whip.
- Mini marshmallows: They soften a little while the salad chills, which is one reason I think this is even better after it has had some time in the fridge.
- Crushed pineapple: The small pieces mix evenly through the fluff, so you get a little pineapple in almost every bite without large chunks taking over.
- Cottage cheese: Don’t let this one scare you off. It adds little creamy bites and a slight tang that keeps the salad from tasting overly sweet. Once everything is mixed together, it doesn’t taste like you’re eating a bowl of cottage cheese.

How to Make Lemon Fluff
- Step One: Dissolve gelatin in boiling water. Stir in cold water.
- Step Two: Whisk in dry pudding mix until smooth.
- Step Three: Chill for 20 to 30 minutes until slightly thickened.

- Step Four: Fold in whipped topping, marshmallows, pineapple, and cottage cheese.
- Step Five: Chill for at least 1 hour before serving.

What I Learned Making This Lemon Fluff Recipe
- That first chill is important: After about 20 to 30 minutes in the fridge, the lemon gelatin and pudding mixture should be thicker but still soft enough to whisk and fold. If you add the whipped topping too soon, the mixture is much looser.
- The pudding gives it more body than gelatin alone: The instant lemon pudding makes the base creamier and thicker while also bumping up the lemon flavor. It gives this fluff a softer, creamier texture instead of a firm gelatin texture.
- Really drain the pineapple: Even a little extra pineapple juice can loosen the mixture. I pressed out as much liquid as I could before adding it, and there was still plenty of pineapple flavor in every bite.
- The cottage cheese blends in more than you might expect: You can still see little curds, but once everything is mixed together, the cottage cheese doesn’t overpower the salad. It adds a little tang and keeps all that sweetness from becoming too much.
- It gets thicker as it chills: Right after everything is mixed together, the Lemon Fluff is fairly soft. After the final hour in the fridge, it thickens up quite a bit and has more of that creamy, fluffy texture you want. The marshmallows soften a little too. I definitely preferred the texture after it had time to chill.

Variations and Substitutions
- Try a different Jell-O flavor: Lime, orange, or strawberry gelatin would completely change the flavor while keeping that old-fashioned fluff salad feel. If you change the gelatin, I’d use a pudding flavor that works well with it too.
- Use vanilla pudding: If you only have vanilla instant pudding, you can use it in place of the lemon pudding. You’ll still get lemon flavor from the gelatin, but the finished salad will be a little less lemony.
- Swap the pineapple: Mandarin oranges would be really good here. Drain them well and gently fold them in so they don’t break apart too much. You could also use a combination of pineapple and oranges.
- Leave out the cottage cheese: If cottage cheese isn’t your thing, you can leave it out. The fluff will be a little smoother and sweeter without that slight tang and texture.
- Add more fruit: Stir in a handful of well-drained mandarin oranges or chopped strawberries for more fruit throughout the salad. Just avoid adding anything too juicy since extra liquid can loosen the mixture.
- Skip the marshmallows: You can leave them out if you prefer a smoother fluff salad. I like the little chewy bites they add, especially after they soften in the fridge.
- Add some crunch: Chopped pecans or walnuts would give the salad a completely different texture. I’d sprinkle them on just before serving if you want them to stay crunchy.

Storage Instructions
- Refrigerate: Store Lemon Fluff covered in the refrigerator for up to 3 days. The marshmallows will continue to soften as it sits, and the mixture may loosen slightly after the first day.
- Make ahead: This is a great make-ahead dessert salad. I’d make it a few hours before serving so it has plenty of time to chill and set. You can also make it the night before.
- Freezing: I don’t recommend freezing Lemon Fluff. The whipped topping, cottage cheese, and gelatin mixture can separate and become watery once thawed.
