Impossible Eggnog Pie

What I love most about this pie is how simple it is. You just whisk everything in one bowl and pour it into the pie plate. There is no crust to roll out and no layers to worry about. It is the kind of dessert you can make on a busy December day and still bring something homemade and nostalgic to the table.

Over time, my family and friends started calling me the “Queen of Impossible Pies,” and I do not mind at all. I have a few favorites that everyone looks forward to, like the classic Impossible Pie and my savory Impossible Cheeseburger Pie, which always goes quickly. Whenever I bring a pie, someone usually asks if it is another Impossible one, and most of the time, it is.

I am always thinking of new versions because these pies are so easy. I like that you just mix everything in one bowl and pour it into the pie plate. There is no rolling, no chilling, and no worrying about a crust.

    • Sugar: Regular white sugar works best here and gives the pie that classic Impossible Pie sweetness. If your eggnog is extra sweet, you can cut the sugar back slightly without affecting the texture.

    How to Make Impossible Eggnog Pie

    • Use homemade eggnog: If you have homemade eggnog on hand, it works beautifully in this pie. Just make sure it’s well mixed before measuring.
    • Swap the spices: Not a cinnamon fan? Leave it out and stick with nutmeg only, or add a pinch of cloves or allspice for a slightly different holiday flavor.

    • Let the pie cool completely before slicing. It will continue to set as it cools and you’ll get cleaner slices.
    • Place the pie plate on a baking sheet before putting it in the oven. This makes it easier to transfer and catches any spills.
    • If you don’t have Bisquick, you can make a quick homemade version. Mix ½ cup all-purpose flour, ¾ teaspoon baking powder, a pinch of salt, and 1 tablespoon cold butter. Stir or cut it in until evenly combined, then use it in place of the Bisquick.
    • Check the pie a few minutes before the end of the bake time. The center should be just set and still have a slight jiggle.
    • If the top is browning too quickly, loosely cover it with foil for the last 10 to 15 minutes.
