Over the past few months I’ve started planning our meals instead of just winging it. For years that is what I did…I winged it. Rarely did I ever plan ahead and most dinner decisions would be a spur of the moment kind of thing. Too often, I’d just say I don’t feel like cooking and let’s just order a pizza. I decided a few months ago when we moved to Ontario that I would get organized and that included meal planning. Now I keep a list on my fridge of the meals for that week. This way everyone knows what we are eating for supper. Plus, I always have the ingredients on hand since I plan the meals before I go get groceries. I’ve been saving money and my family is eating better. We’ve only ordered pizza once since we’ve moved here!
Meal planning does come with its challenge. Time is a huge challenge for me two nights per week when Bridget has swimming and piano lessons. I need to plan for quick and easy meals that don’t require a ton of babysitting or prep work. In the past, I would have probably ordered a pizza and just said forget dinner because I have no time to make it. Now, with a little planning, I’m making dinner and still able to take Bridget to activities with some time to spare!
One simple go-to meal for these busy nights is my recipe for Cheesy Chicken and Broccoli. It uses leftover chicken so all you really have to do is cook the broccoli and add in the ingredients for the cheesy sauce. Dinner can be served in 15 minutes!
If you don’t have fresh broccoli on hand, use frozen. That will save even more time since it’s already chopped and ready to cook. I use whatever cheese I have on hand. In this recipe, I use marble cheese, but I’ve tried it with other cheeses in the past. Muenster cheese is good! We had that last week.

Cheesy Chicken and Broccoli
The comfort food dream! This casserole is a whole meal with just 6 simple ingredients. Perfect for leftover chicken.
Ingredients
- 2 bunches of broccoli, cut into florets
- 3-4 chicken breasts, cooked and chopped
- 1/3 cup milk
- 1/3 cup mayonnaise
- 2 cups cheese, shredded
- pinch of nutmeg
- salt and pepper
Instructions
- Bring a large pot of salted water to a boil. Add broccoli and boil for 5 minutes. Drain and set aside.
- Add mayonnaise, milk, cheese, pepper and nutmeg to a pot over medium heat stirring constantly until cheese has melted. Add in broccoli and chicken and stir to coat and cook till heated through.

I love using leftover chicken in great casseroles. I am diabetic so give me veggies like this broccoli which is good for me. When I add the cheese it gives the casserole enough protein to keep me from feeling hungry later in the evening. Thanks for the ideas.
