Glorified Rice

Glorified Rice is a sweet, creamy fruit salad made with fluffy white rice, Cool Whip, pineapple, mandarin oranges, cherries, and mini marshmallows. Each bite is soft, fruity, and just the right amount of sweet. Serve it cold as a side dish or an easy dessert.

This delicious dessert is one of those old-fashioned dessert salads you may remember seeing at family reunions, cookouts, church suppers, or holiday potlucks. There always seemed to be a big bowl of something sweet and fluffy tucked between the potato salad and casseroles. As a kid, I never questioned why a dish made with Cool Whip, fruit, and marshmallows was called a salad. I was just happy to see it on the table.

It has its roots in the American Midwest, where Scandinavian immigrants brought their love of sweet rice dishes. Over time, it became a familiar sight at community gatherings and Lutheran church suppers. It was especially popular from the 1930s through the 1970s, when creamy fruit salads like this were a regular part of the potluck table.

The name is part of its charm. Plain cooked rice was “glorified” by dressing it with whipped cream, pineapple, cherries, and marshmallows, turning simple leftovers into something sweet enough to serve as dessert. It may seem like an unusual combination now, but one bite explains why it has stuck around for so many years. It’s lighter and fluffier than rice pudding, with fruit, marshmallows, and whipped topping instead of a thick, custard-like base. It may become your new favorite dessert!

    • Cooked white rice: Make sure the rice is completely cooled before mixing it with the other ingredients. Day-old rice works especially well because it is a little drier and less likely to make the salad mushy.
    • Cool Whip: Thaw it in the refrigerator before using. Fold it in gently so the salad stays light and fluffy.
    • Crushed pineapple: Drain very well before adding it to the bowl. Too much liquid leftover from the pineapple juice can make the salad watery.
    • Mandarin oranges: Drain them carefully and fold them in last so they do not break apart.
    • Maraschino cherries: Cut them in half and pat them dry with a paper towel. This helps keep the red color from spreading through the salad.
    • Mini marshmallows: These add sweetness and a soft, chewy texture. Letting the salad chill gives it time to soften slightly.

    How to Make Glorified Rice

    • Step One: In a large bowl, add the cooled rice. Break up any clumps with a fork.
    • Step Two: Fold in the Cool Whip and stir to combine.
    • Step Three: Add the pineapple, mandarin oranges, cherries, and marshmallows. Fold the mixture gently to combine.
    • Step Four: Cover and refrigerate for at least 2 hours to let everything chill and set.
    • Step Five: Stir lightly before serving and serve cold.

    Variations and Substitutions

    • Use fruit cocktail: Swap the pineapple, mandarin oranges, and cherries for a well-drained can of fruit cocktail for an even more traditional version.
    • Add coconut: Stir in ½ to 1 cup of sweetened shredded coconut for extra sweetness and texture.
    • Add some crunch: Chopped pecans, walnuts, or sliced almonds add texture.
    • Try different fruit: Seedless grapes, diced peaches, or chopped apples can be added or used in place of some of the canned fruit. Pat the fruit dry before mixing it in.
    • Use homemade whipped cream: You can replace the Cool Whip with stabilized whipped cream. Regular whipped cream will also work, but the salad may soften more quickly in the refrigerator.
    • Use a different rice: Long-grain white rice works best, but jasmine rice can also be used. Avoid strongly flavored or sticky rice, as it can alter the texture.
    • Leave out the marshmallows: The salad will still be sweet and creamy without them, especially if you prefer a less dessert-like version.

    Storage Instructions

    • Refrigerate: Store this rice salad in an airtight container or cover the serving bowl tightly with plastic wrap. It will keep in the refrigerator for up to 3 days.
    • Make ahead: This salad is a great make-ahead option because it needs time to chill. You can prepare it the night before and give it a gentle stir before serving.
    • Before serving: If the salad thickens after sitting in the refrigerator, fold in a spoonful or two of Cool Whip to loosen it up.
    • Do not freeze: Freezing is not recommended because the fruit and whipped topping can become watery and lose their texture once thawed.

    • 1 container Cool Whip 1L/16oz container, about 4 cups, thawed
    • 1 can crushed pineapple 540ml/20oz can, about 1 ¼ cups, well drained
    • ½ cup mandarin oranges well drained
    • ½ cup maraschino cherries halved and patted dry
    • 1 cup mini marshmallows
