Glorified Rice
Old-fashioned Glorified Rice is a sweet, creamy fruit salad made with Cool Whip, pineapple, oranges, cherries, and mini marshmallows.

cooked white rice
cooled

Cool Whip
1L/16oz container, about 4 cups, thawed
1

crushed pineapple
540ml/20oz can, about 1 ¼ cups, well drained

cup
mandarin oranges
well drained
½

maraschino cherries
halved and patted dry

mini marshmallows

Instructions
In a large bowl, add the cooled rice. Break up any clumps with a fork.
Fold in the Cool Whip and stir to combine.
Add the pineapple, mandarin oranges, cherries, and marshmallows. Fold gently to combine.
Cover and refrigerate for at least 2 hours to let everything chill and set.
Stir lightly before serving and serve cold.
Notes
Make sure the rice is completely cooled before mixing it with the Cool Whip.
Day-old white rice works well because it is slightly drier and less likely to make the salad mushy.
Drain the pineapple and mandarin oranges very well to prevent the salad from becoming watery.
Pat the maraschino cherries dry with a paper towel so the color does not bleed into the mixture.
Chill for at least 2 hours before serving so the salad can set and the flavors can blend.
Store leftovers covered in the refrigerator for up to 3 days.
Freezing is not recommended because the fruit and whipped topping will change texture after thawing.
