Apple Brown Betty
Apple Brown Betty is a warm, old-fashioned baked apple dessert with layers of tender apples and buttery brown sugar breadcrumbs.

Veldon’s aunt dropped off a cooler full of Honeycrisp apples. Her friend owns a local orchard, and she knows Veldon is obsessed with apples. I’d already made a bunch of apple recipes this season, like apple crisp and nobby apple cake, so I wanted to see what he’d think of apple betty.
He raved about how yummy it was and ate almost the whole thing himself.
This recipe has been around a long time. You can probably find a version in grandma’s recipe box or an old church cookbook. It was a handy way to use up stale bread and stretch a few apples. The name first shows up in print in the 1860s, and nobody knows who the original Betty was. Mine was my grandma. Her name was Betty, and this recipe makes me think of her every time.
I served mine warm with vanilla ice cream and caramel sauce. The ice cream melts a little into the apples. Soft, sweet apples and a crispy, buttery topping. I think it’s the perfect fall dessert.
Ingredients
The full printable recipe card with measurements and instructions is found at the bottom of the post.
- Honeycrisp apples: Peel and slice.
- Plain breadcrumbs: Not seasoned.
- Brown sugar: Light or dark; both work. It doesn’t matter.
- Cinnamon
- Nutmeg
- Salt
- Unsalted butter: Melt it. It goes right into the crumbs.
- Water: It softens and steams the apples.

How to Make Apple Brown Betty
- Step One: Preheat oven to 350°F. Grease an 8×8 baking dish.
- Step Two: Combine breadcrumbs, butter, brown sugar, cinnamon, nutmeg, and salt in a bowl. The texture should be coarse crumbs.
- Step Three: Layer half the apples in the dish. Sprinkle 1 tablespoon of water over the apples.
- Step Four: Top with half the crumb mixture.

- Step Five: Repeat layers, finishing with crumbs on top.
- Step Six: Bake uncovered for 40 minutes, until apples are tender and topping is golden.
- Step Seven: Serve warm, plain or with vanilla ice cream.

What I Learned Making This Recipe
- The traditional way is different. You add the butter and water over the top at the end and let them drip down through the layers.
- I mix the butter into the breadcrumbs instead. I find it leaves fewer dry spots.
- Put the water on the apples. It helps soften them.
- Slice the apples about the same thickness. It helps them to cook evenly.
- Lightly press down the top layer of crumbs. It helps the topping brown evenly.
- Skip soft apples. Red Delicious and McIntosh break down into mush and can turn mealy, so the layers won’t hold up.

Variations and Substitutions
- Try the traditional method. Skip the butter in the crumbs, and add the butter and water on top after layering. I find mine less dry, but this is the classic way.
- Use other firm apples. Granny Smith, Golden Delicious, or Braeburn all work. A mix of sweet and tart is good too.
- Swap in some pears. Replace part of the apples with sliced, peeled pears.
- Make your own breadcrumbs. Stale bread works well. Dry it out, then crush or pulse it into crumbs.
- Add more spice. A pinch of ginger or cloves goes well with the cinnamon and nutmeg.
- Add nuts or raisins. Stir in a handful of chopped walnuts or pecans, or raisins.

Storage Instructions
- Refrigerator: Cover and store leftovers in the fridge for up to 3 days.
- Freezer: Let it cool completely, then wrap it tightly or put it in a freezer-safe container. Freeze for up to 2 to 3 months. Thaw overnight in the fridge. The topping won’t be quite as crisp after freezing.
- Reheating: Warm it in a 350°F oven to keep the topping crisp. The microwave is faster, but it softens the crumbs.
