Hi Simply Stacie friends, Nicky here, calling in from Kitchen Sanctuary with a dessert recipe to set you up for summer!

This decadent dessert contains piles of soft and sweetened whipped cream that’s dotted with juicy, amaretto-spiked strawberries and tangy lemon curd. Between you and me, I also like to add crushed amaretti biscuits to compliment the almondy hint in the delicious strawberries. 

Considering how easy this dessert is to make, it’s surprisingly layered!

    Although this Strawberry Lemon Fool is one of my summer staples, you can pull it out at any time of year. I’m just partial to strawberries during the summer as they’re fresh, sweet, and super juicy. The sweet cream and crunchy amaretto biscuits also add different textures to the dessert which makes it a crowd-pleaser for any season.

    If you want to switch things up slightly, you can switch out the strawberries for any other fruit you fancy! This is one of my more adaptable dessert recipes, as you can pair the base with bananas, apples, cherries, mixed berries, or anything else your heart desires.

    As it’s basically fool-proof thanks to the simple steps and minimal prep time, it’s the perfect recipe for creating with kiddos. Just watch out for sticky fingers licking up the amaretto; for this reason, I recommend swapping the booze for water if you’re making this dessert for the entire family!

    Strawberry Lemon Fool

    Perfect for a summer party or BBQ! This luscious dessert is piled high with soft, sweetened whipped cream, dotted with juicy amaretto-spiked strawberries and tangy lemon curd and then topped with crushed amaretto biscuits.

    Ingredients
     
     

    • 1 cup chopped strawberries
    • 1 tbsp granulated sugar
    • ½ tbsp amaretto optional – replace with water if you like
    • 1 cup heavy cream
    • 2 tbsp powdered sugar
    • 4 tbsp lemon curd
    • 2 amaretti cookies you can replace with shortbread or even graham crackers if you prefer, crumbled

    Instructions

    • Place the strawberries in a bowl with the granulated sugar. Stir together and leave to macerate for 15 minutes. After 15 minutes add the amaretto or water and roughly crush the strawberries with a fork. Put to one side.
    • Whisk the cream and powdered sugar together so it’s thick and billowy, but not stiff.
    • Take three glasses and layer the cream, spoonfuls of strawberry and dots of lemon curd. Sprinkle the top with crumbled amaretti and place a lemon slice on the edge of each glass before serving.

    Notes

    You can make these 2-3 hours ahead, but sprinkle on the amaretti biscuits just before serving – otherwise they’ll go soft.
