If you are looking for something different and refreshing for breakfast, whip up my Mixed Berry Breakfast Cups. They are a baked cinnamon swirl bread that is then filled with yogurt and topped with fresh berries. A simple but satisfying start to your morning. 

I get tired of eating the same thing over and over again. I need variety, and also options for sweet and savory. One of my favorite sweet options right now is this breakfast cup. Literally, not even five minutes of prep and I have it in the oven getting nice and toasty. Once it has cooled, top and devour!

Mixed Berry Breakfast Cups

These are crazy good! I would even say decadent. The golden brown bread cups bakes to perfection with a cinnamon sugar coating that melts into the bread as it cooks. I used Greek yogurt for the thicker, creamier consistency and blackberries and raspberries to top it off. It’s rich and dessert-like so I could only eat two, but I enjoyed every last morsel.

    Absolutely! I love the cinnamon raisin bread as it adds depth and flavor to the cups, but you could use any type of bread you have. Whether just plain Italian, wheat, whole grain, etc. Sprinkling on the cinnamon and sugar with the butter helps add a good amount of flavor to the bread so even plain bread gets dressed up!

    How Long Do the Mixed Berry Breakfast Cups Store

    These are best served warm. They will become soft and get soggy. I would recommend only making what you plan to eat at that time since it won’t store well.

    How to Make Berry Breakfast Cups 

    Start out by preheating your oven. Then you want to butter both sides of your bread. Then push one piece of bread down into the muffin pan. It is okay if you happen to tear the bread. Just do your best to push it back together. 

    Then take a sprinkle of cinnamon and sugar and cover the bread cups on the one side. Bake in the oven until golden brown and toasted. Then let the muffin cups cool for five minutes. Once cooled, put in the filling you want, and enjoy. I used yogurt and berries for mine.

    Mixed Berry Breakfast Cups

    With a swirl of cinnamon and sweet raisins, these adorable little breakfast cups are begging to be filled as you wish! Try them filled with yogurt and mixed berries – yum!

    Ingredients
     
     

    • 6 slices raisin bread
    • ¼ cup salted butter softened
    • 1 tbsp sugar
    • 2 tsp cinnamon
    • 1 cup mixed berries
    • ½ cup vanilla Greek yogurt

    Instructions

    • Preheat oven to 375°F.
    • Spread butter over both sides of the bread slices.
    • Push each slice of bread into a muffin pan. You’ll have to push it in to fit (and don’t worry if it rips a little).
    • Stir sugar and cinnamon together and sprinkle on top of each bread cup.
    • Bake for 10 to 12 minutes until golden. Let cool for 5 minutes before removing from the muffin pan.
    • Add a dollop of yogurt to the centre of each bread cup. Top with berries.
