Christmas morning breakfast just got a whole lot cozier with these delicious gingerbread waffles, packed with warm spices and sweet goodness. They're so easy to make and truly the best when topped with maple syrup, butter, or a dollop of whipped cream!
Add the all-purpose flour, baking powder, sugar, brown sugar, cinnamon, ground ginger, ground nutmeg, and salt to a mixing bowl and stir together.
In another mixing bowl, whisk the eggs together. Add the milk, vegetable oil, molasses, and vanilla extract. Whisk to combine.
Pour the wet ingredients into the dry ingredients. Mix until just combined. Do not overmix.
Grease the waffle iron with cooking spray. Add about ¼ cup to the waffle iron. Cook until slightly browned on both sides of the waffle, about 1 to 2 minutes. Time may vary depending on the waffle iron you use.
Serve with maple syrup, butter or whipped cream.
