This High Liner® Lemon Sole Sheet Pan Dinner is a restaurant worthy meal that you can easily make in less than 30 minutes! High Liner® Pan-Sear Selects® Lemon Pepper Sole are baked to perfection alongside mini red potatoes and green beans tossed in a lemon pepper garlic vinaigrette.
1(12oz/340g) bag of fresh green beanswashed and trimmed
1 ½lbred mini potatoeswashed and chopped into ½ inch pieces
¼cupextra virgin olive oil
Juice from one lemonabout 2 tablespoons
3cloves garlic minced
1tsplemon pepper

Instructions
Preheat the oven to 450F. Grease a sheet pan with cooking spray.
Add green beans and red mini potatoes to a large mixing bowl.
In a medium mixing bowl, whisk together the extra virgin olive oil, lemon juice, garlic, lemon pepper and salt. Pour mixture over the green beans and potatoes and toss to cover.
Spread the veggies on the sheet pan.
Move the veggies to make room for four High Liner® Pan-Sear Selects® Lemon Pepper Sole filets.
