These crispy homemade potato chips are super easy to make in the air fryer. Perfect for when you're craving a salty, crunchy snack with loads of flavor!
Using a food processor with a very thin slicing disc, slice the potatoes to the same thickness, around 1/16th or 1/8th inch thick. You can also use a mandoline or a potato peeler.
Put the slices in a large bowl of very cold water. Rinse off as much of the potato starch as you can. Drain and refill.
Let the potato slices soak for 10 minutes, then drain and lay the slices out on a large towel. Pat dry.
While the potato slices soak, preheat air fryer to 360°F if your model calls for preheating.
Lay the slices out in a single layer on a large pastry mat, sheet of aluminum foil or a sheet pan. Spray the slices with grapeseed oil.
Mix together the garlic salt, oregano and blackened seasoning in a small mixing bowl. Lightly sprinkle the seasoning on the potato slices. You will likely have extra seasoning after, which you can set aside in case you need more. Salted potatoes will "sweat" so blot off any excess moisture you see before cooking them.
Put the potato slices in a single layer in the air fryer. You will likely end up doing 3 to 4 batches depending on the size of your air fryer. The slices will curl as they cook so it's best to keep them separated.
Cook in the air fryer at 360°F for 7 to 10 minutes or until the chips are golden brown in spots and crispy. Flip the chips halfway through for even browning. Use the first batch as a test run to see if the chips need more time or whether you need to add more seasoning.
Cook in batches until all the potato slices have been cooked.
Garnish with chopped, fresh parsley, if desired.
Notes
If you can't find blackened seasoning, you can use cajun seasoning instead.
