Wash the potatoes and prepare the oil and seasoning. Slice the potatoes with 1/16 or 1/8-inch thickness.
Next, place the sliced potatoes in a bowl with water. Rinse off the potato starch and drain and refill the water. Soak the potatoes for 10 mintues.
Preheat the air fryer to 360°F and drain the potato slices while patting them to dry.
Next, lay the slices out in a single layer on a large pastry mat, sheet of aluminum foil or a sheet pan. Spray the slices with grapeseed oil.

Put the potato slices in a single layer in the air fryer. You will likely end up doing 3 to 4 batches depending on the size of your air fryer. The slices will curl as they cook so it's best to keep them separated. Cook for 7-10 minutes.
