Preheat the oven to 350°F. Pour the melted butter into a 9x13-inch baking dish.
Add the shredded chicken in an even layer over the butter. Scatter the frozen vegetables over the top.
Sprinkle the garlic powder, onion powder, poultry seasoning, and black pepper evenly over the chicken and vegetables.
In a mixing bowl, whisk together the biscuit mix, the seasoning packet, and milk until combined. Slowly pour it over the chicken and vegetables. Do not stir.
In the same bowl, whisk together the cream of chicken soup and chicken broth until smooth. Pour this mixture evenly over the biscuit layer. Do not stir.
Bake uncovered for 55 to 60 minutes, or until the top is golden brown and the edges are bubbling.
Let the cobbler rest for 10 minutes before serving. Sprinkle with parsley, if desired.
Notes
Do not stir the layers together after adding the biscuit mixture or the soup mixture.
Rotisserie chicken is an easy shortcut for cooked, shredded chicken.
You can add frozen vegetables straight from the freezer. No need to thaw first.
Let the cobbler rest for 10 minutes after baking so the filling can thicken.
The biscuit topping will be soft underneath and golden on top, similar to a chicken pot pie-style casserole.
