Simple Syrup
Add the water and sugar to a large pot over medium heat. Stir constantly until the sugar is dissolved.
Bring to a simmer, stirring constantly. Simmer for 15 minutes. Keep stirring so the sugar will not burn.
Remove the pot from the heat and cool to room temperature.
Coffee
In another large pot, add the water and instant coffee and stir to combine.
Bring to a boil, stirring occasionally.
As soon as it boils, remove from the heat and allow to cool to room temperature.
Assembly
In a large pot or container, stir together the simple syrup and coffee mixture.
Add the white rum and vanilla and stir to combine.
Add to bottles and chill completely before using.
