Add the flour, baking powder, and salt to a large mixing bowl. Stir with a fork to combine and set aside.
In a separate large mixing bowl, cream together the butter and sugars using a mixer. Beat until smooth.
Add the egg and vanilla and mix again until smooth.
Fold in the dry ingredients, half at a time, and mix together until smooth. It will be a thick and smooth dough.
Separate the dough into three equal pieces. Add one piece of the back into the mixing bowl. Add either red or green food coloring (starting with 3 to 4 drops) and blend until a solid color forms. Add more gel if a deeper color is desired. Repeat for the other color with an other piece of dough (washing the bowl in between).
Once all three portions of dough (original/white, green and red) are formed, roll each out flat using a rolling pin over a floured surface about ¼ inch thick.
Add layer on top of one another (red - white/original - green) and use a pizza cutter to cut out a 9x13" rectangle, making all layers the same side. Set aside and separate by color any excess dough from the edges.
Very carefully pinch in one long side of the rectangle and roll inwards, all moving at the same time. Use a sharp knife to keep the log straight.
Trim the edges of the log with a knife before wrapping in plastic wrap. Allow to chill for 2 hours.
Preheat the oven to 350℉ near the end of chill time.
Unwrap the log. Use a sharp knife to cut ½ inch cookies from the log and place them on a baking sheet covered in parchment paper.
Bake cookies for 13 to 15 minutes or until the cookies are just set.
When done, allow the cookies to cool on a baking sheet for 1 minute before transferring to a wire cooling rack. Serve warm or at room temperature.
