Let your slow cooker do the work for this delicious pork recipe! The ginger glaze with lime juice and brown sugar makes this dish better than the rest.
In a small bowl, combine the spice rub ingredients (brown sugar through Chinese five spice). Stir until combined. Rub over pork tenderloin.
Add 1⁄2 cup water to bowl of slow cooker. Place pork inside. Cook on low for 6 hours. Once done, either slice or shred.
For glaze, combine soy sauce, lime juice, ginger and brown sugar in a small saucepan. Bring to boil over medium heat and whisk until sugar is dissolved. In a small bowl, whisk together cornstarch and 1⁄4 cup water. Add to saucepan and return to boiling, stirring constantly, until mixture is thickened. Serve over pork.
