Instructions
In a large bowl, combine sauerkraut, green pepper, onion, celery and pimento.
In a small bowl, whisk together vinegar, sugar, celery seed and salt. Pour over salad and stir to combine.
Chill for 2 hours in the fridge before serving.
Notes
When you remove the sauerkraut from the jar, drain the liquid off with a slotted spoon.
