Instructions
Preheat oven to 325°F.
Boil potatoes on the stovetop for 10 minutes or until tender. Add salt, pepper and butter. Add eggs, cream cheese and sour cream and mash to combine.
Pour into a greased 9x13 inch casserole dish and sprinkle with cheese.
Bake for 50 minutes. Top with green onions if desired.
