Whip up this easy Skillet BBQ Beef and Rice made with ground beef, barbecue sauce, rice, and veggies. A quick, budget-friendly one-pan dinner ready in 30 minutes.
Heat a large skillet over medium heat. Add the ground beef and onion and cook, breaking the meat up with a spoon, until browned and fully cooked—about 6–8 minutes. Drain excess grease if necessary.
Stir in the garlic. Cook for 1 minute until the garlic is fragrant.
Pour in the BBQ sauce, beef broth, and Worcestershire sauce. Stir well to coat the beef. Let it simmer for 3–5 minutes.
Stir in the cooked rice, frozen peas and carrots and salt and pepper. Mix everything thoroughly. Cook for another 5 minutes, stirring occasionally, until the rice is heated through and the sauce is evenly distributed.
Top with sliced green onions before serving.
Notes
Cold or day-old rice works best because it holds its texture and won’t get mushy in the skillet.
Use your favorite BBQ sauce to change up the flavor—smoky, spicy, or sweet all work well.
You can swap the peas and carrots for other frozen vegetables you have on hand.
