Instructions
In a large bowl, whisk together pudding mix and milk until slightly thickened.
Fold in the whipped topping until smooth.
Stir in peaches, pineapple, marshmallows, and coconut.
Cover and chill for at least 1 hour before serving.
Notes
Drain the peaches and pineapple really well so the salad stays thick and fluffy.
Use instant vanilla pudding mix, not cook-and-serve pudding.
Make sure the Cool Whip is thawed before folding it into the pudding mixture.
Fresh peaches can be used instead of canned peaches when they are ripe and in season. Peel and chop them before adding.
Peach pie filling can be used for a sweeter, more dessert-like version.
Cheesecake pudding or white chocolate pudding can be used instead of vanilla pudding for a different flavor.
Homemade Cool Whip can be used in place of store-bought, but it should be thick and stabilized to hold up well.
The coconut can be left out if you prefer the salad without it.
Mandarin oranges, fruit cocktail, or chopped strawberries can be added or used in place of some of the peaches.
Chopped pecans or walnuts can be stirred in right before serving for crunch.
Chill for at least 1 hour before serving so the flavors can blend and the marshmallows can soften.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Stir gently before serving.
Freezing is not recommended because the fruit, whipped topping, and pudding can become watery once thawed.
