Ground beef, cheese and tangy BBQ sauce create a quick, easy and cost-effective family meal that everyone is sure to enjoy. This dish is a great make-ahead meal, and makes a great lunch the next day!
Heat oven to 350°F. Cook pasta according to package directions. Drain and return to pot.
In a skillet, cook beef and onion over medium-high heat for 10 minutes, stirring occasionally.
Add beef mixture, barbecue sauce, mozzarella cheese and 1 cup of cheddar cheese to the pasta and stir to combine. Spoon into a 9x13 casserole dish. Sprinkle with remaining 1 cup of cheddar cheese.
Bake uncovered for 30 minutes or until hot in the centre. Sprinkle with chopped parsley, if desired.
