Add flour to a shallow bowl. Combine panko breadcrumbs and coconut in another shallow bowl. Add eggs to a third shallow bowl.
Working in batches, coat all sides of the shrimp in flour. Transfer to egg and coat all sides. Then place in panko/coconut mixture, pressing crumbs onto shrimp firmly, making sure all sides are covered. Carefully dip in egg a second time, then panko/coconut a second time.
Spray air fryer basket with oil or grease with paper towel. Place shrimp in a single layer into basket. Spray tops with oil.
Cook 350°F for 5 minutes or until golden brown. Flip and cook another 5 minutes or until golden brown.
